    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Monday Already?

I got 8 glorious hours of sleep last night! I was fast asleep by 10 p.m. and it felt great! The only disruption during that time was, of course, a trip to the bathroom (dang water!) and hearing our rowdy neighbors vacuuming at 3 o’clock in the morning.

It was back to work this morning after having a relaxing day yesterday. Is it really Monday already?  How do the weekends go by so quickly?!

I couldn’t wait to eat my breakfast this morning because I woke up feeling ravenous!

I know it’s the end of the month when we’re slowly running out of meal options. I have one more bowl’s worth after this morning of Kashi H2H Honey Toasted and Special K granola. Boo.

I was c-section girl today and was in the operating room during lunch hour and was starving. Is it so weird that I can be hungry while watching a surgery? Another “you know you’re a nurse when” moments.

I couldn’t wait to eat my leftovers from last night’s dinner for lunch today. So good!

Disclaimer from this point out: My lunches usually aren’t aesthetically pleasing because I’m a nurse and usually I don’t truly get a 30 minute lunch break.  So my food looks like a reheated mess but it works, it’s yummy and fast!!

I had a hankering for a mandarin after I ate so I had one. Gotta give my body what it needs and wants!!

I packed a couple of snack options for today. I didn’t know if I wanted the trail mix I brought, apple with peanut butter or both! I knew I had a run planned for tonight so I needed some fuel to get me through my run and not be too famished before dinner.

I chose….

An apple and some peanut butter of course!  It just sounded more appealing to me at the moment.

And look what a co-worker brought me today!  Isn’t that so sweet?  I can’t wait to continue with my new obsession with Laughing Cow wedges.  They are for sure on my list for the next big grocery trip!!

I left work and was contemplating my run that I had planned in my head.  I feel really great after my 21 miles on Saturday but there is just a little tiny kink in my right hip that I feel so I figured since I’d made it this far with no injuries, I wouldn’t start now.  So I’m running tomorrow night!  I was productive when I got home though.  I did many sets of pull-ups, push-ups and ab exercises!

Dinner was pretty simple tonight.  We’re running really low on options for meals all around so we decided that it’d be a breakfast for dinner sort of night.  Nothing too fancy at all!  I had one scrambled egg, a Morningstar “sausage” pattie and a Pillsbury biscuit with strawberry jam spread.  I wish we had some wheat bread but I’ll settle for Pillsbury.  They aren’t too shabby tasting.  🙂

Oh man, I feel like my dinner looks super lame too but tomorrow night will be more appealing… I promise!

I’m off to finish making my tuna salad for lunch tomorrow and get settled into bed for the night!  Hope you all had a great Monday!!

Pizza and Temptations…

Whew… am I glad to be home after a long day at work!  I ended up getting to bed at 10:30 last night.   Obviously, later than I thought but still okay nonetheless.  I had to force myself out of the bed this morning.  I was just sluggish this morning!!

Breakfast was the rest of my Raisin Bran cereal.

Thank goodness it lasted me until lunch because I was hangry by lunch time!

The rest of our organic spring mix topped with shredded carrots, bell pepper, onion, feta cheese and BBQ grilled chicken.  So yummy!

After delivering a baby around 4 p.m., (I didn’t deliver a baby, I just helped someone deliver theirs, lol) I was famished from all the hard work so I decided to gobble up a red apple.  With some unpictured peanut butter on the side, of course.

I couldn’t wait to get home for dinner so I practically ran out the door. It’s pizza night at the Watson’s!!  I was pumped about trying out the wheat crust we bought at Lotsa Pasta on our big grocery trip at the beginning of this month!  Look how amazing this pizza looks!

Topped with a variety of cheeses, sauce, bell pepper, onion, mushrooms and black olives.

I had this piece and one more.

Verdict?  I loved it!  The hubs, however, did not.  He thought it tasted too much like regular bread instead of pizza crust.  I’m so disappointed because I love making our own pizza but the hubs has ruled it out from now on.  He said he’ll cook one more pizza at home with the other ball of dough we bought but he’s ordering out from that point on.  Boo!!  I guess I’ll just have to do my own pizzas in more of a creative way.  🙂

He’s made so many compromises on so many other eating/healthy areas so I can’t blame him for wanting to have the best tasting pizza.

So you’ll see this as a repeat for lunch tomorrow.  It’s all packed up and ready to go!  Can’t wait to dig into it tomorrow!!

Currently I am fighting a huge temptation to end Lent season early.  The hubs is headed to the store now to pick up ice cream and I’m dying to try the Edy’s Girl Scout Thin Mint he plans on purchasing.  UGH!  I know there is only like 10 days left of this Lenten season but it’s getting harder by the day.  Dessert and sweets have been surrounding me lately and I’m craving them bad!!  Help!  I know I wouldn’t be a bad person if I ended it but I think I’d be disappointed in myself.  You know?

Well… I’m off to do some leg and ab strength training.  I’m hoping to be in bed soon!  Hope you all had a happy hump day!

Oops… almost forgot to show you what was posted today!  I like these two of me from the 10k on Saturday!  I think they’re pretty good for race photos.  At least I wasn’t making an awkward face or anything!

Sprint It Out

I hit the arms, shoulders and abs hard last night after I blogged.  It felt awesome.  I do love me some strength training!  I’m hoping to get some good leg and ab strength training in tomorrow night.  But what I was most excited about that I was in bed at 9:30 and asleep at 10!!

I had a meeting this morning so I ended up not having to wake up until 6 so I truly ended up getting 8 hours of sleep.  Loved that feeling!  Here’s to hoping I’ll repeat it again tonight.

I was only going to work on the floor from 11 a.m.-7 p.m. but since my meeting got out earlier than 11, and I didn’t want to go home for an hour or two, I clocked in early and hit the floor running. We were packed to the max today so I’m thankful we at least had enough organization for me to be able to eat my meals!

First up: Another Granny Smith for breakfast.  It definitely wasn’t filling enough.  I wish I would’ve eaten it as a snack later instead.

Lunch couldn’t have come soon enough, obviously, since the lone apple wasn’t filling at all.  The rest of my tuna noodle casserole.  Oh so tasty.  No crescent roll this time!

One of my co-workers and I were talking yesterday since she’s doing the whole Weight Watchers thing and she was talking about all her points and what she eats for snacks and stuff like that.  I used to be obsessed with counting calories just last year and the year before that and last May, I completely stopped counting and I hope I never start again.  But kudos to people that don’t let a calorie count control them (or a points count) because it seriously almost ruined me.   That’s probably a story for a later blog.  We’ll see.  ANYWAY… she was talking about buying the Laughing Cow swiss cheese wedges and I told her I’d never tried it before and I’ve been meaning to buy some.  Guess who brought me a Laughing Cow wedge today?  Yes, she thought about me.  How sweet is that?

I couldn’t wait to have it as my afternoon snack!

The verdict?

I LOVED this cheese.  Laughing Cow, if you’re reading this, I will sample and review your products anytime.  Usually I’ve been a cheddar cheese only girl when it comes to eating straight cheese but I’m branching out so I’ll sample away!  😉

It held me over until dinner and I was super glad.  I went on my run tonight and ended up pushing it really hard.  I always feel like I need to push harder on my shorter run days and I don’t know why.  I’ll tell you this, there is nothing like pounding the pavement hard after a long day at work.  It takes all the stress, frustration, etc. out of the  day.  But I sprinted the last mile and ended up running my last mile in 7:03 minutes.  Whoop!!  I finished my whole 3 miles in 26:16 minutes.  Getting faster!

I came inside and was ready for some dinner.  I kept it light with a salad topped with shredded carrots, feta cheese, chopped onion and bell pepper and topped with a tad bit of Italian dressing.

I might have had 4 or 5 chips dunked in our homemade salsa.  🙂  The hubs had it sitting out and I couldn’t resist.

A few red grapes to calm down my tongue that felt like it was on fire after eating that hot salsa!!!

Alright bloggies and friends, I’m off to shower and climb in bed!!  Work day tomorrow and a pizza night tomorrow night!  Can’t wait to see how this wheat crust turns out that we bought a few weeks ago!!  I hope you all had a fantastic Tuesday!

What do you like to do to de-stress after a long day?

No Lunch Day

Before I get to why I titled this post “No Lunch Day” I’ll tell you about my morning.  My morning started off by me crawling out of bed.  My body was so not ready to get up at 5:30 a.m.!  This time change has messed me up!!  But I got going shortly after being awake and headed into work.  I was hungry as soon as I woke up but I ended up holding off eating breakfast until 9 a.m.  I think I’m going to try and start waking up around 5 a.m. on the days I work and making a green monster and spending time with the hubs and starting my day off right.  We’ll see if that ever happens.  😉

I had my favorite new combo of cereal: Kashi H2H Honey Toasted and Special K Granola.  A match made in heaven.

Before I knew it things were kicked into high gear on our floor and with my patients so I didn’t stop to eat lunch until 1 p.m.  Thank goodness our manager had ordered us lunch, otherwise I wouldn’t have been able to eat at all.  Since we were unable to actually take an official lunch “break”, we called it a ‘No Lunch Day’, hence the reason for the title.

I didn’t get any pictures of lunch because we were that busy and I thought cramming food down my throat was a little more important at the moment.  Eat while you can when you’re a nurse.

Our manager ordered us Jimmy John’s platters.  I had 3 small pieces of subs.  One veggie, one tuna and one ham.  I still can’t decide which one I liked best.  I think they’d be ten times tastier if they had whole wheat sub bread available for the platters.

After an hour, I was still hungry so I had another small piece of the ham.

No snack for me today because those 4 small pieces held me over until I got home.

I got home and decided that sent I didn’t get home until almost 8 that I would need to do some strength training tonight instead of running.  I shall run tomorrow night, for sure.

I did a number of different style push-ups (standard, military, diamond, decline and wide legged), pull-ups (wide grip, close grip over handed and close grip under handed), a variety of other back exercises with weights and ab exercises.  I worked it hard and feel great!!  After that hard workout, I deserved dinner!!

On the menu: Grilled chicken, asparagus and a sweet potato.

I tell no lie: This is only the second time in my life that I’ve had a sweet potato. I think I’d prefer a regular potato in the end but I think it’s a good change and healthier too.  Maybe we’ll try sweet potato fries next!!

I ate half of the chicken and asparagus and my whole sweet potato (since it was a smaller tater) and packed all that up, plus half of another sweet potato for a future lunch at work this week!  I love leftovers!!

That’s about it on my end.  I’m needing to wind down for bed and get rested to hit the craziness of the baby factory again tomorrow!!    I might see some fruit in my future before I hit the hay.  But what’s new?!  Hope you all had a great day back into the week!

A Little of This and A Little of That

That’s exactly what my lunch consisted of today.  I didn’t really have any set lunch planned out so I just threw together a mixture.

Roasted red pepper hummus with wheat crackers, manadarin, red grapes and dry roasted almonds.

I’m glad I kept it pretty light because I’ll have such a starchy, carb loaded dinner tonight with the girls.

This morning I spent pretty much in my office bed reading blogs and catching up on the good ole Tivo.  I finally decided that it was time to get out of bed and get some things accomplished in case I got called in.  I haven’t gotten called in yet, obviously, so here’s to hoping that I have the rest of the afternoon off.

Anyway… I ended up working my booty out with some leg strength training, mixed with a tiny bit of arm strength training and some major ab work.  My abs and legs were burning.  I love feeling that burn!!  As I was on the ground, close to the ground, squatting in one spot, I noticed some things that needed to be cleaned.

So I hopped to it and burned up some more calories lifting furniture, vacuuming, loading the dishwasher, wiping things down and folding and putting away laundry.  I haven’t tackled the bathroom yet so maybe I’ll do that tomorrow.  That’s my least favorite spot in the loft to clean.

I count my day as having been productive!  It’s yucky, overcast and rainy outside and I’m fervently praying that the rain will stop by tomorrow so I can get my 19 miler in!! Eek!

Alright, the hubs is leaving soon for his overnight trip and taking the computer with him so hopefully the lighting will be good enough at the restaurant tonight to take a few pictures of the food with my iPhone so I can post later tonight or tomorrow.  If not then I’ll just shoot away with my camera and wait until he gets home tomorrow night to post.  We’ll see.  Keep checking in.  I might surprise you guys with a post!  😉

Nothing too exciting to report around here.  The rest of the afternoon was laid back until I needed to get ready for church.

Following church I headed home alone since the hubs was leading worship for both services tonight. I ended up eating 4 unpictured wheat crackers with hummus to tide me over until dinner since he wasn’t going to get home until almost 9 p.m.  So I ended up doing some arm and ab strength training and feel great.  So glad I got it in.  I’ve neglected strength training and wish I hadn’t.  I got on a path of doing it maybe once or twice a week, sometimes not at all, and haven’t made it a priority in my quest to live the healthiest lifestyle.

I got in some good Oscar watching while I worked out and ended up rewarding myself with a hot relaxing bath while I read some more of Bethenny Frankel’s book “Skinnygirl Dish”.  Love that book!!!

Before I knew it the hubs was calling to say he was on his way home so I quickly hopped up to get dinner cooking.  Not that it takes a lot of prep or cooking time but I still wanted it ready for when he got home.

I ended up splitting another half of a sandwich with the hubs because I was starving!  And the buns really weren’t large so I didn’t feel bad.  I do wish they were wheat buns though.  Maybe next time.  We just haven’t found any wheat buns where we like the taste.

After dinner I decided fruit was in order.  A mandarin with red grapes.  A repeat from last night but good nonetheless.

I’ve packed up the rest of the sloppy joe meat for lunch tomorrow, snacks and breakfast and am set to get back into the grind of work.

Another Manic Monday

My day has been busy and full of drama and I’m so glad I’m home.  But anyway, we won’t get into all of that.

Breakfast was (of course) Raisin Bran cereal.

I was getting my food ready for work tomorrow and discovered I had like two bites of my Kashi H2H left so I have a little mixture of raisin bran cereal and the remainder of my H2H.  Hope it’s good together.  I can’t wait to stock up on everything at the grocery store next weekend!!

Lunch was a mixture.  Flank steak, a bit of mashed potatoes, green beans, and a baby organic spring mix salad.

Snack was my own rendition of trail mix.  Almonds, dark chocolate covered plums and craisins.  LOVE this mixture.

Thankfully a patient rolled in that made the remaining hour of work go by super fast and I’m glad it’s over!  I rushed home and was going to run but the hubs forgot I was going running and had already started cooking.  Oops.  So I happily obliged to eating the turkey burger and fries he cooked up. DELISH!!!  This is the first time I’ve ever had a turkey burger and I’m hooked.


I’ve decided to get in some strength training tonight since I couldn’t get my run in.  Push-ups, pull-ups and abs are beckoning me.  See you soon!!
