    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Party Number 2- Done

We are back from the wedding and reception and are pooped. It’s been a busy day and I am happy that I’m about to climb into bed.

The wedding was great. It always brings tears to my eyes to watch people step into holy matrimony. I find myself thinking back to our wedding day and it was so perfect that I can’t imagine what we could do differently to make it any more special.

After we got in the car after the wedding, I wanted to take a picture of our rings.  This is one shot we forgot to get on our wedding day!  Boo!

Which, by the way, isn’t the hubs original wedding ring.  He lost 20 pounds after we got married and his other titanium ring was way too big!  So we bought this new titanium ring when we were in Vegas on a vacation a year and a half ago.  And I have to say, I like it better than the original.  Another fun fact: My engagement ring is actually the hubs grandmother’s wedding ring.  We had my two bands custom made to match.  Makes it that much more special to me.

We headed to the reception and sat down with some finger food appetizers first.

Then the wedding party arrived and it was time to eat.  I was sure to get a lot of green on my plate since my plate from the graduation party was lacking in the green.

Salad, green beans, potatoes, cheese tortellini, chicken cordon bleu, and beef tenderloin.  Oops, can’t forget the roll.

I waited around just to grab some cake.  Such a pretty presentation.

The pictures I took of the slice of cake I grabbed weren’t good at all because of the low lighting so you’ll just have to picture a slice of strawberry cake.

Here’s us… not the best picture because we are worn out but it will suffice for now.

We have an extremely early morning ahead of us and another jam-packed day tomorrow.  So who knows when I’ll be able to blog.  I might be iPhoning it tomorrow morning.  I’m hurrying off of here so I can wash my face and climb into bed.  A 6:30 wake up call is going to come way too fast!  Nite!

What’s your favorite part of a wedding?

I have two: Watching the dad give his daughter away ALWAYS brings tears to my eyes and when the couple is first announced as Mr. and Mrs. to walk back down the aisle to leave.  That was such a special moment for our wedding and will never forget doing a little jump and squeal as I turned around, grabbed my bouquet of flowers and my husband’s arm for them to announce our new name!  I loved every second.

In Love

Good evening bloggies and friends!  I can’t believe Friday is almost over and I have the next two full days off from work.  I plan on totally sleeping in tomorrow morning.  Which means, I’ll probably wake up at 7 instead of 5:30.  Hey, any extra sleep counts, right?

I had a great rest of the day at work and did enjoy my granola bar along with an apple and 3/4 tbsp. of peanut butter.  So good.

I biked home to a much anticipated dinner prepared by the hubs.  It was phenom!

I am already so in love with our decision to join a CSA.

The hubs grilled up some pac choi that was insane delish.

We had fresh lettuce mix straight from the farm topped with some feta, sliced radishes (from the farm) and a sriracha vinaigrette. Our salad mix included: A mix of buttercrunch, oakleaf, Bibb/Romaine cross, and Deer Tongue lettuces, accented with lacinato kale, tat soi, baby spinach, and some red mustard to add a little bit of heat

A small piece of ribeye for me. Those are two grilled scallions on the side and those were amazing!!!  Packed with flavor!

All together it made a perfecto meal!

We had a bright idea of walking to our local McDonald’s to rent a movie from the Redbox and decided that a $1 sweet treat was in order.  Since we’re pretty tight on our budget for the month, we dipped into our change jar.

I was way tempted to order their new McFlurry flavor of Reese’s Cups they’ve recently debuted but have been pretty heavy on food and dessert recently so ordered a reduced fat vanilla ice cream cone instead.  Can’t beat it for 150 calories.

We saw this cute little bunny as we walked.  I just wanted to scoop it up!

We rented the movie Sherlock Holmes tonight.  It’s on right now and I haven’t really been paying too much attention.  Too much other stuff to do and on my mind.  Can’t wait for a couple of days to maybe decompress.  We have a busy day tomorrow with a graduation party and a wedding so who knows what sporadic times I’ll be posting.  Hope you had a happy Friday!

Creative Juices Flowing

As you will be able to tell, my creative juices were really flowing last night as I packed my lunch. I’m aiming daily to put more effort into what I eat, how I prepare it, what it looks like plated, etc. I feel like it makes the process of eating it just that much more enjoyable and satisfying. And obviously it looks prettier in pictures too!

I ate pretty carby yesterday so I decided veggies were in order today for lunch.

I got all my things set out and ready to cut them up last night.

A HUGE salad!

Like my rows of veggies? Bell peppers, tomatoes, cucumbers, carrots and celery.

Always a little sprinkle of feta because feta makes it BETTA! And cracked black pepper too.

I had celery left over and thought some hummus on the side with a few crackers would be perfect for some more crunch and flava!

I broke into the red roasted pepper hummus I bought at Whole Foods and dare I say, I wasn’t as impressed with the flavor like the Athenos I usually eat.

At least I tried it! I think that was a perfect lunch! And for a snack later I’ll eat the snack I had packed for yesterday! Oikos blueberry Greek yogurt with some Bear Naked granola.

What a fabulous day of eats so far. I think tonight is grilled chicken, salad, roasted broccoli and maybe some Annie’s mac and cheese. We’ll see what’s presented to me upon my arrival home!!

Trial Parenting

Good evening friends!  Can you believe it’s already the end of the day on Friday?  Why do days off go by so much more quickly than days spent at work?  Boo on that!

After lunch, I ended up laying out on our  rooftop deck for 3 hours!  You better believe I got some good color going on right now.  A little red tint but will turn into a brown tint soon.  🙂

I actually got a cat nap in the sun laying up there today.  And it looks like this buddy got a good nap in the sunshine too.

“Oh, Mom, I’m not ready for my close up right now. Can’t you see I’m trying to nap?”

We ate dinner a little earlier than usual tonight because we were asked to babysit while some of our good friends attended a wedding tonight.  Of course we said yes!  We love babies and babysitting and don’t get to do it very often.

Dinner was a superb success.  We bought some Ahi Tuna fillets at Sam’s Club last week and broke those bad puppies out tonight.

We tried them sauteed.

I had a huge salad on my plate.  The hubs didn’t think I’d be able to fit any other food on there because it was so big!

But I proved him wrong.

We headed out the door and here we are, babysitting!  In other words, trial parenting.

The babe is in bed so it’s not like we have to do everything but we are prepared if she needs anything.  I have arms that are willing to hold and rock!

I brought a sliced apple and some PB for a snack for later since we ate dinner so early.

Always have to be prepared for when hunger strikes!  Ya hear?

Wish us luck as we act as parents for a few hours.  We have a fun, laid back day and night prepared tomorrow.  I’m hoping for a day of sleeping in, picnics, biking, running, etc.  We’ll see what all we can fit in.

I think I might be trying my hand at oatmeal again in the morning.  If you remember, my previous two trials at it failed miserably so suggestions are welcome. 🙂

Happy Birthday!

I want to take the time to publically wish the most beautiful, precious woman on earth and extremely Happy Birthday! My mom turned 21 today and looks just as amazing as she did when she was 20. 🙂

She has been such a great influence in my life and is always there when I need her. The hubs and I both love the mess out of her. We couldn’t ask for a better mom or mother-in-law. I so wish we didn’t live 6 hours from each other so I could give her a big ole hug and smooch! So join me in wishing the woman who birthed my huge 8 lb. 9 oz. self! She’s a warrior I tell ya!

I ended up eating some different fruit someone brought into work today for an afternoon snack instead of my grapes and mandarin so I’m good to go for breakfast in the morning! One less meal to worry about packing something for.

I biked home to eat some dinner, strength train and cook some homemade peanut butter cookies.

I love these cookies and they’re so easy! Not so healthy but fabulous still!

1 c. Sugar
1 c. Peanut Butter
1 Egg

Mix, shape into balls on cookie sheet and press down on top of cookie with a fork to make grooves.

Bake at 375 degrees for 8-10 minutes depending on the thickness and size of the cookies. Voilà! You’re finished!

I ended up getting 49 cookies out of the one batch.  The most I’ve gotten yet!

And then you eat them all. Well, I, unfortunately couldn’t eat any of them because I’m taking them to work for a party tomorrow so I has to keep my paws off.

We ate an absolutely delicious dinner tonight.  The hubs did good!

I had to have dessert since I couldn’t have any cookies!  I had maybe 1/2 a cup of vanilla ice cream with a crumbled Reese’s Cup on top.  Perfecto!

It’s time to get some strength training in while I watch The Biggest Loser!  I’ll see you tomorrow friends!

Veggies Galore

I didn’t want to overload myself with leftover pizza for lunch considering we had 4 nice size pieces leftover from last night’s dinner so I had one decent size piece and sliced it in half.

I wanted a huge salad to go along with my pizza so I loaded it up with feta and veggies!

I’m completely satisfied.  Now what are we going to do with those other 3 pieces of pizza that are leftover at home?  I don’t think the hubs will eat them and I’m eating lunch that work is providing for the next two days!  Can they sit in the fridge that long?  Oh well… we’ll figure it out.

I brought some fruit for an afternoon snack.  Just a mandarin and some red grapes but satisfying, nonetheless.

Hope your day is going splendidly!  I can’t wait to head home, strength train, eat dinner and bake some cookies for work on Wednesday!  See you tonight!

Keeping It Real

I was all about my lunch today.  I couldn’t wait to dig into my huge green, veggie filled salad and chicken!

That chicken from last night was so moist and delicious so I knew I was in for a treat with a chicken leg I grabbed!

Salad salad!!  Oh I love you and all your fresh vegetables!

Such a good, filling lunch!

I packed some trail mix for my later afternoon snack.

Paired with a thing of Sargento cheese.  I was excited to pick up a whole pack of these individual Mozzarella string cheeses so I could pack them in a hurry!

Can’t wait to get home and eat some pizza tonight!!  See you later gators!
