    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Party Number 2- Done

We are back from the wedding and reception and are pooped. It’s been a busy day and I am happy that I’m about to climb into bed.

The wedding was great. It always brings tears to my eyes to watch people step into holy matrimony. I find myself thinking back to our wedding day and it was so perfect that I can’t imagine what we could do differently to make it any more special.

After we got in the car after the wedding, I wanted to take a picture of our rings.  This is one shot we forgot to get on our wedding day!  Boo!

Which, by the way, isn’t the hubs original wedding ring.  He lost 20 pounds after we got married and his other titanium ring was way too big!  So we bought this new titanium ring when we were in Vegas on a vacation a year and a half ago.  And I have to say, I like it better than the original.  Another fun fact: My engagement ring is actually the hubs grandmother’s wedding ring.  We had my two bands custom made to match.  Makes it that much more special to me.

We headed to the reception and sat down with some finger food appetizers first.

Then the wedding party arrived and it was time to eat.  I was sure to get a lot of green on my plate since my plate from the graduation party was lacking in the green.

Salad, green beans, potatoes, cheese tortellini, chicken cordon bleu, and beef tenderloin.  Oops, can’t forget the roll.

I waited around just to grab some cake.  Such a pretty presentation.

The pictures I took of the slice of cake I grabbed weren’t good at all because of the low lighting so you’ll just have to picture a slice of strawberry cake.

Here’s us… not the best picture because we are worn out but it will suffice for now.

We have an extremely early morning ahead of us and another jam-packed day tomorrow.  So who knows when I’ll be able to blog.  I might be iPhoning it tomorrow morning.  I’m hurrying off of here so I can wash my face and climb into bed.  A 6:30 wake up call is going to come way too fast!  Nite!

What’s your favorite part of a wedding?

I have two: Watching the dad give his daughter away ALWAYS brings tears to my eyes and when the couple is first announced as Mr. and Mrs. to walk back down the aisle to leave.  That was such a special moment for our wedding and will never forget doing a little jump and squeal as I turned around, grabbed my bouquet of flowers and my husband’s arm for them to announce our new name!  I loved every second.

Happy Belly

What a day. I am home, with a happy belly and ready for bed. But let me back up first.

I ended up eating my huge orange for an afternoon snack and saved my granola bar for another time.

Probably a good thing since I ate pretty heavy tonight. The fruit kept it light.

I left work in a hurry and biked to our community group potluck dinner. I couldn’t wait to eat some comfort food!

The roasted turkey thing didn’t work out so it was roasted chicken instead.

I got a bite or two of everything. More salad than anything to get my greens in!  Also a biscuit, mac and cheese, glazed carrots, roasted potatoes, roasted chicken, corn, green bean and mushroom casserole, and grape granola salad.

We brought the corn and roasted potatoes.

I was super pumped because we all headed to Dairy Kastle to grab dessert.  I biked and met everyone there.  I wanted to get a little more exercise in, especially since we had 75 degree weather today!

I know, I know, I’m so bad. But it’s so good! 🙂

I downed the whole thing because that’s how I roll.

I’ll run it off tomorrow. Speaking of running, I’m pretty ecstatic to throw my Saucony’s on and hit the pavement tomorrow. It’s been a long 6 days off! Hopefully my toes will hold up okay.

We have a teeth cleaning in the morning and then it’s off to grocery shop! One of my favorite things in the world! Whole Foods here I come! I know you’ve missed me!

Do you have any dairy shacks that open for the spring, summer and fall??  I think they are so much better than regular restaurants!

Leftovers + Greens

Good afternoon friendlies!!!  Lunch was half of what I didn’t finish for dinner last night!  Gotta love some leftovers!

Barbecue chicken, half a roll and roasted red potatoes.

I needed some green so I finished off the rest of our spring mix and made a small side salad.

Topped with tomatoes, onion, cucumbers and shredded carrots.

With a drizzle of Italian dressing and my salad was complete!

My brand new day is going well with eating!  I’m feeling cleaner and lighter already!  Who knows what dinner will bring though?!

Hungry, Hungry Hippo

A hungry, hungry hippo is what I was today!  I guess my body’s trying to catch up on all the calories it burned this past weekend but boy is it relentless!!!

After breakfast this morning, I couldn’t wait to dig into lunch!  I packed half a ham sandwich topped with cucumber, spring mix, onion, tomato and mustard.

I was still super hungry so I went ahead and ate the snack I had packed for the afternoon.  A peanut butter chocolate granola bar from my batch that I made last week.  Oh so good!

Not even a few hours later I was ravenous again!  This time I had some graham crackers and peanut butter. Unpictured!

By the time I biked home, I was hungry yet again!  I was so glad to smell some good stuff cooking when I got home!

Barbecue chicken, grilled asparagus, roasted red potatoes and a Sister Schubert’s roll.

I ate half the chicken, all the asparagus, half the potatoes and half the roll.  I packed the other halves up for lunch tomorrow.

Honestly, it wasn’t the best meal we have cooked but oh well.  Tomorrow’s always a new day.

I had to return the movie we rented the other night because we kept forgetting to take it back to the Redbox so I biked up the road to our Kroger to return it and pick up some corn for a potluck dinner we’re having with friends Thursday night.

At least I got a little more exercise in.   I’m just dying to strength train or run!  Really, I’m just dying to run but know I need to rest the remainder of the week.  Friday, I think, will be the day I jump back on the pavement.  At least I hope it is!

I biked back home to have some cake and ice cream for dessert.

It’s almost all gone!  Sad day when that happens but probably good too because I could see it packing on the pounds I lost during marathon training and I’d like to stay the weight I am now for good.  We shall see!

Actually, I have decided to pack the rest of the cake up to take to the girls at work tomorrow.  I have got to get it out of this house!  All this sugar I have been inhaling has actually made me hungrier I think with my blood sugar spiking.  I just can’t seem to feel fully satisfied after I eat dessert.  And I’m feeling more and more like crap.  Not light and clean.  Maybe I need to make a new once a week dessert rule…. hmmm… decisions, decisions.

I hope your Tuesday treated you well.  I’m off to make all my meals for work tomorrow and settle in for bed.  Nighty night friends!

An Unexpected Treat

Good evening friends!  I’m going to try and make this a super quick post because I didn’t make it to bed until midnight last night and I’ve got to get some extra rest tonight to get my body back on track!

Lunch was DELICIOUS!  I had my leftovers from our trip to Blue Dog Bakery & Cafe after my 10 mile race on Saturday.

Half of my spicy tuna sandwich topped with sliced hard boiled egg and arugula.

A few chips and a little bit of wheatberry salad on the side.

I’m officially obsessed with this restaurant now.  I must make it a regular occurrence and be sure and try new things on the menu.

I debated on whether I wanted to eat a snack this afternoon but I felt like my body was telling me I needed one.

So I dug into a banana with 3/4 tbsp. of peanut butter.  You know I had to get my peanut butter intake for the day!

The hubs called me to tell me that I was invited over to a cookout where he had helped friends put in a garden bed and privacy fence all day so I jetted out of work on my bike and booked it!  I was hungry and a good time with friends plus great outdoor hanging out weather was a perfectly great unexpected treat.

They had a huge spread!  I got a little bit of brisket, grilled chicken, fruit, potatoes, carrots, asparagus and tomatoes.

Then the option of dessert was presented and I couldn’t resist.

A slice of red velvet cake with a tad bit of vanilla bean ice cream on the side.  Oh so good.

Can you tell I’m catching up on missing out on desserts/sweets from Lent?  I have got to get control of it but I missed them so much!!

We had a super great time of hanging out on the back porch talking and getting to know one another better.  I loved every second of it.  Thanks Sarah and Mike!!  Y’all are awesome!

Ok!  I’m off to settle in for bed… well, after I make my lunch for tomorrow that is.  🙂

Another great night of eating out for me tomorrow night.  You’ll have to check back tomorrow night to see what the goods are!
