    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Childhood Lunch Memories

Thanks for all of your oatmeal suggestions! Maybe mine weren’t good the times I tried because I just used water and not milk. I’ll give that a try soon. Hope I fall in love with it!

My lunch today reminds me of childhood. I kid you not, I grew up eating a PB&J almost every single day from grade school through middle school. And I’ve eaten plenty of these through high school, college, nursing clinicals, at home and almost every day at work last fall. It’s just a great staple sandwich!

Now I used to eat it with chips every single day and some chocolate and coca-cola on the side but I’ve changed my ways.

I tried this new jam I bought at Fresh Market the other night.

I noticed the other day, after spreading it on my bread, that the Smucker’s Strawberry Jam that I’ve loved all my life contains high fructose corn syrup in it. Why must you do this to me Smucker’s?! I’ve been faithful for so long! So out with the old and in with the new! I was quite pleased with the taste of the new jam! And I loved their list of short, simple, natural, organic ingredients.

I’m still a changing my ways people… watch out!

Ok, I’m off and running! Here’s to hoping my day doesn’t turn out as crazy and physically demanding as it did yesterday after I ate lunch!

We’re off to a friends house to celebrate her birthday after work and it’s going to be another dessert dinner night. Just to warn you. It’s hard having a job that works until after other people’s dinner time! I end up eating a lot of dessert. What a shame! 🙂 See you later tonight friends!

Vitamin D

It’s 12:30 and I’m happy to say that I am currently soaking in some much needed Vitamin D laying out on the rooftop of our loft.

Now I had to improvise since all my bathing suits are still in storage so I’ve got a sports bra on with the straps pulled down to avoid tan lines and Soffe workout shorts on. Hey. You gotta do what you gotta do. I’d rather get some color on my skin than none at all so I had to be creative!

Anyway… work called this morning and put me on call so I fell back asleep until 9 and it was wonderful!! I called at 9 to see if they needed me to come in at 11 and they said no and that I could have the rest of the day off. Woo hoo!! I’m all about it.

So I slowly woke up while I watched two quick 30 minute shows that were on our DVR and decided to go for a run. I ended up doing 4 miles and decided it was time for a little lunch and laying out since I didn’t eat breakfast. I was sure to put on the sunscreen. Safety first!

I fixed a lunch to take on the rooftop with me. Lots of water, a PB&J and a sliced pear.

Maybe a book and a magazine will be read too. 🙂

I mean, can the weather get any better today!?

It’s so perfect. The slight breeze makes this day of laying out perfectly pleasant. Not too hot, not too chilly or overcast. I plan on soaking as much sun in as I can!

I was thinking as I was running today, I have a very special person that will be in town one week from today to cheer me on for the marathon. I’m very privileged they are traveling to come support me!! I’m keeping it a secret until they arrive but can you guess who it may be!?

Alright, Pandora is calling my name to turn it on as I enjoy this day. I’m off to do some grocery shopping later and then biking to Community Group. Oops… that reminds me! We’re supposed to bring dessert tonight. Guess I’ll be whipping something up in the kitchen later too. It’ll be quite a productive day once it’s over. I love it!!

Or better yet, how would you improvise a swimsuit if yours was in storage and you wanted to soak up some rays?

Hungry Woman

Can I just say how hungry I stay these days? This marathon training keeps me ravenous. I couldn’t wait to leave work so I could eat dinner but I knew I needed to get a run in so I used my hunger as motivation.

But first, about the day. I ate a nice salad topped with flank steak for lunch with a mandarin on the side.

I actually felt satisfied for a couple hours after lunch but by 4, I was ready for a mid-afternoon snack. Today was a pear and 3/4 tbsp. peanut butter sort of day.

It didn’t last me as long as I would’ve liked because by 6, I was practically wanting to gnaw my arm off.

I pedaled as fast as my little legs would pedal on the way home tonight. I wanted to hit the door, throw on my running shoes and run so I could eat!  Three miles later, I was back home and ready to eat!

We are definitely running super low on groceries since our last big grocery trip was almost 6 weeks ago so we are keeping it simple with sandwiches tonight. I plan to run by the store tomorrow to pick up a few things to get us through the rest of the week.

I decided a simple grilled cheese sounded yummy.

When I eat a sandwich, I usually need chips or something crunchy to eat with it so the hubs and I split a bag of Jimmy John’s BBQ chips.

I love their chips. You get a lot in the bad and the bag is only 150 calories! I’m all about it!!

We had some visitors from Memphis pop in tonight and we loved it!  Lindsey and Lucy came for a visit and we were able to catch up and meet sweet little Lucy for the first time.  I loved her immediately because she loves kitty cats!!  Smart girl she is!  Look at these sweet pictures of her and Nattie!

I hope you’ve all had a great Tuesday! I’m off to shower and wind down for bed. It’s up early to do it all again in the morning. 😉

Disaster Strikes

I feel like a whole new woman after getting 9 hours of sleep last night. They called me from work at 5:30 this morning and put me on call. I fell back asleep and woke up at 7:30, only to get a call from working calling me in to work at 7:55. So I found myself running around in the hospital before I knew it.

I ate a later breakfast because of the kink thrown in my schedule with being put on call but at least I got one. Another half of a toasted whole wheat bagel topped with unpictured cream cheese.

Lunch didn’t come too long after that. Some whole wheat angel hair pasta with marinara and ground turkey.

I couldn’t wait to eat my afternoon snack because I was hungry! Thank goodness I ate my pear when I did because I ended up having to go back to the operating room with a patient right after I ate it.

It was a rush home because our pipe above our bed is dripping water and a maintenance guy is coming to look at it. We need it fixed ASAP because we leave town tomorrow for our surprise trip. And the fact that I was also starving doesn’t help matters.

Thank goodness the guy figured it out right away and it turns out the pipes weren’t even leaking!  It was just condensation since it’s been so warm outside and we hadn’t turned on our air conditioning yet.  That works for me!  I love living in a loft with exposed duct work and pipes so I was glad it didn’t turn into anything serious because I love loft living too much!

I ate a super simple salad again like last night.  No whole wheat tortilla chips or laughing cow tonight though.

My salad ended up only being half of this bowl since the hubs and I were splitting it so I treated myself to some ice cream too!

I’ve got to get to packing!  Not only am I needing to pack all my clothes but some healthy snacks too!  It’s a 13 hour car ride just one way to our destination!  So I need healthy options to snack a lack on!  I have several granola bars from the 10 mile race last Saturday to try out!  Can’t wait!  Hope you all had a great Thursday!  I’ll try to blog on the road from my iPhone so be checking back!

Soaked It In

At least I got to soak in a little bit of the fabulous weather we had today on my bike ride to our meeting tonight! I just can’t wait for it to stay nice and warm so I can start laying out! Beach trip is a little over 2 months away and I need a base tan before we go, for sure!!

Work ended up picking up quite a bit after lunch and by 5, I was ready for my snack! I had a pear with 3/4 tbsp. peanut butter and it satisfied my hunger completely!

After our meeting it was already 8:45 and we wanted a quick fix for dinner so we decided to try out the new and improved Domino’s pizza they are advertising. It doesn’t hurt that we also had a coupon for a supreme pizza on Wednesday’s only for $8.99. I’m all about some sweet deals! And I’ll have leftovers for tomorrow’s lunch. Score!

I’m off to eat this pizza up before I eat my own arm! See you tomorrow!!

Unexpected Day Off

Hello friendlies! I got an unexpected day off from work so I am enjoying it to the fullest. I woke up around 7:30 this morning and felt like I had been asleep forever. I stayed awake for a bit but felt like a headache was coming so I napped until 9. My head still feels a little achey so I’m just hoping it subsides.

No breakfast for me this morning. I know. Shame on me. We are running so low on groceries that it’s not even funny. I ended up eating an earlier lunch because of it.

Tuna salad that I prepared last night, crackers and a pear.

I had a few crackers leftover so I ate a wedge of the Garlic and Herb Laughing Coe cheese. So yummy!

It was actually a perfectly, simple, filling lunch. I plan on going for a run in a little while so I think it was a good lunch before a run.

The sun is shining and I’m setting out to just run. We’ll see how many miles I end up running.

Mentally Preparing

I hope this Saturday finds you well!  I woke up bright and early to head to work this morning.  I was so reluctant to climb out of my warm bed because I was sleeping super hard and had a sweet kitty baby cuddling with me. It doesn’t get much better than that.

Breakfast at work this morning consisted of a granola bar I  received in my race packet for my 10k last weekend.  A Cascadian Farm Organic granola bar.

I was impressed with their list of ingredients.

I didn’t know how I’d like the harness of the bar.  I’m used to chewy granola bars but I really loved this bar!  I’m definitely going to buy these at our next grocery trip.

They had great texture and a great flavor.  I’m definitely impressed.  Really excited that I have another sample pack left!  The pack comes with two bars and I ate one around 9 and the second around 10.

At 11:30, I was told that I was being sent home from work because I was in overtime. They hate to let you get those overtime hours in.  So here I am, at home and gearing up for an unexpected afternoon off with my 21 mile run.  I’m trying to mentally prepare since I didn’t expect to run it today so hopefully I’ll be good to go.

I ate the lunch I had packed for work today.  A simple peanut butter and jelly sandwich with a pear on the side.  I just love my new paper towels.  It makes me excited about summer being right around the corner!

I’m letting my digest a bit before I hit the pavement.  I’m glad that I am able to run today because it’s supposed to rain tomorrow.  I’m going to take full advantage of having sunshine today!  And hey, at least I carbo loaded last night without realizing it!  I should be all set.  I do have a few frustrations to run out and I feel like that always makes for my best runs when I have stress that needs to be dealt with.

Wish me luck!  Twenty one miles seems daunting but knowing that this is my last long, long run before the marathon, I think it’ll keep me going!  Can you believe 4 weeks from today I’ll be running my first marathon?!  I sure can’t!  Eeek!!  Getting excited!

I’ll be posting later tonight after I ice, take a bath and eat some dinner!!
