    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Never Gets Old

I have to admit. If I could live on one food item everyday for the rest of my life and never grow tired of it, it would be peanut butter and strawberry jelly.

I LOVE LOVE LOVE PB&J’s and have always eaten Lay’s BBQ chips or Sour Cream and Onion Pringles on the side but I’m a big girl these days… okay, maybe I’ve just turned into a big girl since the first of the year but who’s holding it against me? I now try and balance my sandwich out with some fruit.

Today it was an apple and a mandarin.

Wait! How did a piece of oatmeal raisin and pecan cookie jump onto the plate?!

I don’t discriminate so I ate it all. My belly thanks me. And so does the little girl still trapped inside me.

I have a homemade peanut butter chocolate granola bar packed for a snack if I need it.

Pushing It Back

Since I didn’t eat my afternoon snack of grapes and a mandarin yesterday, I figured I’d eat it this morning for breakfast instead!  It gave me one less thing to pack for work today.  That’s always good.  I do love me some fruit, as you all know.

We’re having a retirement party for one of our OB techs at work today so there is going to be a HUGE spread of all sorts of food!  I can’t wait to dig in!  And of course, I’ll be taking pictures along the way.  I don’t know if I’ll get a lunch post in today so you might just see me later tonight.

We’re headed to a Cinco De Mustache party at a friends house tonight.  I can’t wait to get some pictures. The hubs shaved his beard off and just has a mustache and it’s too stinkin’ hilarious!  Good times, people, good times.

Veggies Galore

I didn’t want to overload myself with leftover pizza for lunch considering we had 4 nice size pieces leftover from last night’s dinner so I had one decent size piece and sliced it in half.

I wanted a huge salad to go along with my pizza so I loaded it up with feta and veggies!

I’m completely satisfied.  Now what are we going to do with those other 3 pieces of pizza that are leftover at home?  I don’t think the hubs will eat them and I’m eating lunch that work is providing for the next two days!  Can they sit in the fridge that long?  Oh well… we’ll figure it out.

I brought some fruit for an afternoon snack.  Just a mandarin and some red grapes but satisfying, nonetheless.

Hope your day is going splendidly!  I can’t wait to head home, strength train, eat dinner and bake some cookies for work on Wednesday!  See you tonight!

Not Feeling Full

Is it the end of the day already? I’m bummed because that means my only day off in the midst of a 12 day stretch is almost over!  Boo!!

I’m happy to say we finished all of our major grocery shopping for the month and we ended up buying a lot more for our money this time.  I am seriously impressed at how full our freezer, refrigerator and pantry are now!  I love, love, love it!  So many fresh options that we have no excuse to cook at home this whole month and avoid eating out.

I had a quick snack of Danon’s strawberry yogurt topped with Bear Naked granola when we got home.

This was only half of my yogurt that I stored in the fridge from the other day when I opened up the Danon yogurt.

Ollie boy wanted to take a whiff.  He’s becoming quite the organic, natural, clean eater too.  Ok, maybe not really but he’s still a cutie.

I donned my swimsuit and headed up to our rooftop deck and soaked up some major sun!  I was up there for over two hours!  See how happy I am to be soaking it in?

I headed back down to our place to dig into the amazing dinner the hubs prepared!  We had rib-eye steak, wilted spinach, baked sweet potato and grilled asparagus.

Everything was fab, I thought!  I ate about 3/4 of the asparagus, all the wilted spinach, half the sweet potato and all my steak since it wasn’t big once all the fat was cut off of it.

Alright, I jumped the gun on making a dessert rule of only eating it once a week.  It’s impossible for me to do.  I like dessert and know that I can eat anything in moderation so yes, I might eat it everyday, I might not but I’m going to do what I want.  That’s my new philosophy.

Enter: Vanilla ice cream in a martini glass with an oh so cute decorative strawberry.

I was still hungry after eating dessert so I filled up a glass with lots of fruit!!  Mandarins, Strawberries and Red Grapes

Ok, I think I might finally be feeling satisfied!

I almost forgot!  The professional pictures of the marathon are up!  Here’s mine.  I love them… especially the one of the hubs running with me towards the finish line.  These make me want to cry.  Maybe it’s finally hitting me that I actually ran a freaking marathon!

This one is my favorite.  I think I should order it and frame it!  The happiness portrayed on both of our faces is undeniable.  I’m so thankful for my husband.

I’m not one to hide emotion but these pictures are overwhelming.  It shows exactly the happiness I was feeling and I swear this was one of the best days of my life.  I feel tears come to my eyes as I even look at these.  Maybe it’s hitting me that I really did run a freaking marathon!  I’m so grateful to have these to capture this special day in my life.

Speaking of running, I did not get my run in today because my toes are officially JACKED!  The second toe on my right food is ridiculous!  It looks like an abscess could be brewing so I’m going to lay off of the running until I see some further healing take place.  So please pray that it will heal quickly!  You all know how bad I want to be back on the pavement but I also don’t want to suffer irreversible damage.

I will continue biking, strength training and walking because it doesn’t involve high impact on my toes so maybe that’ll keep me happy until running can occur.

The running of The Kentucky Derby is tomorrow!  It’ll be crazy around here.  If I end up being placed on call for some reason, I think we’re going to head to a Derby party or two.

Filling Up on the Veg

I have really come to love veggies.  Especially loading them up in my salad.  I couldn’t wait to dig into my lunch today!  A big ole green salad!  I ate pretty dense, carby foods this past weekend so I needed a little green back in my life.

Topped with onion, cucumber, shredded carrots, tomato, sprinkle of cheese and drizzle of Italian dressing.

I ate a mandarin on the side too.  Unpictured of course.  Sorry!

I’m off and running back to work!  Thank goodness my muscles are slowly feeling better!  See you after dinner!  I’m pretty pumped about dinner since it was the dinner we planned to fix last night but didn’t because we just weren’t hungry!  Hope you’re having a fab day so far!

Lunchy Lunch

It was lunch time at the Watson house and I was ready!

I didn’t feel like eating too much food but I wanted something crunch, savory and sweet.  I went with some crackers, half topped with roasted red pepper hummus and the other half topped with half of a Laughing Cow garlic and herb cheese wedge.  The rest of my breakfast was also devoured.

I think I met my fruit quota for the day.

Mom ate the other half of my laughing cow cheese and one of my homemade granola bars.  I got her stamp of approval on the granola bars.  It made me happy!  🙂

We’ve been watching Tivo’ed Oprah’s all morning and now we’re finally willing to get ready and head up to my place of work to show mom around.  Who knows what the rest of the day holds.  At least the sun is trying to peek through the rain clouds!  There is hope yet!

De-Toxing

Good morning friends!  I had a glorious night’s sleep and woke up at 8:30 this morning.

After our decadent dinner and my dessert of the richest cake and ice cream, it was time to start my day off eating clean.

Here’s my cake (with the icing scraped off) and some chocolate ice cream that I devoured last night.

I decided fruit was in order this morning.  A mix of strawberries, mandarins and an apple.

I only ate about half and packed the rest away for an afternoon snack.

I feel cleaner and lighter already.  Gotta de-tox the body from all the richness we ate last night!

It is rainy and disgusting outside today!  We’re supposed to have scattered thunderstorms tomorrow during the marathon and I’m just praying that the rain will all come down today and not tomorrow.  I can’t imagine starting a 26.2 mile race in the rain but I think I’d do better if it started raining after the start.

We don’t really have any solid plans today except for taking my mom up to see where I work, meet my co-workers and eat at Old Chicago Pizza tonight to carbo load for tomorrow.
