    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Waking Up Is Hard To Do

The one day this weekend I can sleep in, we of course have a meeting we have to attend.  I could’ve totally slept until noon today, I’m for certain.  Instead, I forced myself out of bed this morning at 8 to get ready for the day.

I didn’t allow myself enough time to make a proper breakfast so I grabbed the Bear Naked bar they gave out after my 10k yesterday and ate that on the way to our meeting.

This one was the tropical fruit bar and to be honest, the date syrup and all the other ingredients that made up the syrup made it seem like I was eating a highly processed sugar granola bar but all the ingredients are natural and you can pronounce them!  No high fructose corn syrup here. Love that!  It wouldn’t be my first go to bar to grab because the coconut flavor came though a little too much for me.  I’m just not a coconut lover.  But it was good enough to hold me over until we could get home and make lunch.

Lunch was actually brunch.  I had two eggs scrambled, Morningstar “sausage” vegan patty, half of a sliced red apple and a mandarin.  Next time I’ll do one egg because two was a little too much, I think.

I might have stolen a bite of the hubs pillsbury biscuit that he had topped with butter and honey.  Yum…

Since I cleaned everything from top to bottom yesterday, I have all day to chill out and rest my body.  The hubs is leading worship tonight so he’ll be gone most of the afternoon and night so that means I get to catch up on my girlie DVR shows that he, obviously, wouldn’t want to watch.

I’m also making a wonderful home cooked comfort meal tonight that I ate growing up.  My mom’s recipe of Tuna Noodle Casserole.  So stay tuned for some comfort food goodness later tonight!!

My Natural Dose of Speed

I was diagnosed with Attention Deficit Disorder, A.D.D., when I was in the 8th grade.  I took the drug Adderall from 9th grade until I graduated college and passed my nursing boards. I feel like there are still moments in my life where I feel like a person diagnosed with A.D.D. but for the most part, I can stay focused on the task at hand.  Sometimes I just have 500 other thoughts in my head while doing it.  And hey, a lot of people that aren’t diagnosed with A.D.D. have the same problem.  It’s called multi-tasking and not enough hours in the day.

Anyway… y’all probably wonder what I’m getting to with this little confession of mine.  After a race I feel like people would be physically, mentally and emotionally spent.  They’re done.  All you might want to do is sit on the couch, turn on the tube, sleep, eat and do nothing in particular.

I’m the complete opposite.  I have so much energy that it feels like I’m on Adderall again.  I get super hyperfocused and take off like a mad woman to the task at hand.  Today it was cleaning.  The hubs had mentioned this morning that we should totally clean the house tomorrow because it just needs a deep cleaning.  So since he’s at Disciple Now all day, I figured I’d hop to it so we can just relax until he has to head to rehearsal for leading worship at church tomorrow night.  I ended up washing 4 different loads of laundry and cleaned, scrubbed, wiped down everything in our loft.  For over 3 solid hours I cleaned and cleaned and am so excited that I was so productive and that we don’t have to worry about it tomorrow!  It doesn’t hurt that I probably burned a few hundred calories while scrubbing the shower tub, vacuuming, wiping down, etc.  🙂

I wound up taking a 15 minute nap and when I woke up I decided that I need to eat.  I didn’t eat a regular lunch after I ate the two bananas following the race this morning so I was hangry!!

The hubs had leftover flank steak in the fridge that he never ate from a couple of nights ago so I kind of did a repeat from lunch yesterday.

Whole wheat tortilla stuffed with flank steak, spring mix lettuce, shredded cheese, sour cream and salsa.

Don’t you love the natural light due to it staying lighter later?! I LOVE IT!!

It’s actually not that big of a wrap when it’s all bundled up and they’re only 100 calories a shell!

I had a few chips, side of salsa and a side of cheese dip.

I was so hungry but ended up eating it pretty slow and broke the chips into pieces and put massive amounts of cheese dip and salsa on them so I would eat less chips.  I totally felt like I got the same volume.

I figured that since I haven’t had my usual mandarin and grapes lately that tonight would be a good time.

A perfectly filling dinner and side of fruit.  I am now content.

I washed our top comforter earlier today when I got on my cleaning whim and after I took it out from the dryer, I realized I hadn’t seen the kitty boys circling my feet lately.  I peeked around the corner and saw this.  Seriously?  Does it get any cuter?

I’m off to finish drying our bed sheets so we have nice clean, crisp sheets to sleep on tonight.  And maybe I’ll get lucky and a kitty boy or two will climb up on the couch with me and cuddle.  I hope you all had a fantastic Saturday!

Guac, Salsa, and Fajitas

What a day it has been.  As soon as I stepped onto the floor at work this morning I was told by the night shift manager “You might as well go ahead and put your roller skates on”. And boy was she right.  Today was different from yesterday in that it was an organized chaos.  We were completely full, busy and had patients waiting for rooms but we had enough staff today to be able to help each other out and pay proper attention to our patients.

I was glad to get breakfast in my belly this morning.  Puffed wheat cereal with a sliced banana.

Lunch was a little late for my usual routine today.  I ate after 1 pm and was pretty hungry.  I was glad to have leftover whole wheat tortellini (cheese filled) with marinara.

With a salad on the side.

All together.  Don’t you love my fancy tupperware?  I wish I could eat on my real plates everyday!  ;-(

Later on for a snack I had a pear.

And maybe I had a handful of Chex Mix too.  I’ve felt super snacky today and I feel like it’s from my weekend of eating mostly carbs.  I’ve got to get back on track because my body is feeling, shall we say, bloated?!  All that bread is making me expand!!

Anyway… I hit the ground running after work and did 3 hard, fast miles.  (Well, fast for me)  I enjoyed the 57 degree weather and it being light outside!!!  Here’s my stats:

Mile 1: 9:53

Mile 2: 9:11

Mile 3: 8:08

Total: 27:12 minutes

YEE HAW!!!

I was famished by the time I got finished with the run and was so excited for flank steak fajitas that were waiting on me!

First up: My whole wheat fajita packed with flank steak, spring mix, homemade salsa, sour cream, cheese and grilled onion.

Homemade guacamole?  Sure.  Note: Another shocker so prepare yourself.  This is only the second time I’ve ever had guacamole.  The first time was just a few weeks ago and I love it!!

Homemade salsa? Absolutely!

All rolled up with some tortilla chips on the side.  Obvi.

So so good!  I wanted another wrap but I decided to wait and see how I felt after a little while and of course, I was full.  But I did seem to have just enough room left in the tummy for some fruit.  One mandarin and red grapes while I am blogging.  I LOVE fruit!!!

Ok, so this night will be the beginning of trying to get back to bed and be asleep by 10 pm!  I’ve got to get moving so I can make it!!  I hope you all had a great Tuesday.  It sure felt like Monday to me… weird!

Skinny Jeans and Pasta

After I posted this morning we left for the surprise birthday party we were attending and ate pizza! Thank goodness they had salad as a filler too.

I topped my salad with the Italian dressing instead of the ranch that was staring me in the face. You know a southern girl loves her some ranch!!

Only two small pieces of pepperoni for me.

All together. The pizza was hot and tasty!

After the party we went jean shopping!! I have lost close to 15 pounds since the first of the year between eating healthier and marathon training. My skinny jeans that I had bought just over a year ago were seriously hanging off of me and didn’t even look like skinny jeans anymore. So after procrastinating (because I hate getting in the shopping mood and I’m pretty cheap), the hubs said that we finally needed to go because I definitely needed new jeans and couldn’t put it off any longer. So off we went.

I was so excited to walk into the GAP and see they were having 30% jeans if you donated a pair of your old GAP jeans. Lucky for me I had worn my skinny not so skinny anymore jeans to the mall since I wanted to have a reference on what exact skinny style they were so I was determined to find some jeans I loved. Right off the bat, the first pair I tried on were perfect and I ended up donating my older ones to be recycled and getting 30% off the new ones. It was a win/win!!

Can we say love?!

Extremely glad that I have a pair of skinnies that actually look like skinny jeans again! Not only did I hit the jackpot with the jeans but I found 7 other super cute shirts and cardigans that I snatched those up too. I only shop about twice a year for clothes. Once each season and get some staple pieces and wear them all season with past clothes that I own. I’m in scrubs most of the time so it’s not like I need “work” clothes. I just need classic staple pieces for each season for when I go out and about. Love what I bought! And super glad that most of the pieces were on sale!!

After our super quick shopping trip we headed to church and then it was home for another Italian dinner. Today has been an all day Italian fare food day! First pizza and then whole wheat cheese tortellini for dinner!

Dinner was so yummy! I’m glad we didn’t have a huge batch of this because I totally would’ve kept eating it!

Fresh grated parmesan? Sure.

Italian style bread on the side to dip in the marinara? Of course.

With maybe a couple more pieces of bread. Hey! I love bread, what can I say?!

I have a little bit of the cheese tortellini leftovers for tomorrow’s lunch at work. No bread. Just pasta.

I had a mandarin for after dinner. I think I’m officially addicted to these.

And we thought it’d be a good idea to cut up the pineapple we bought on our grocery shopping trip last week and it ended up being rotten!!!

I was so upset! I was so looking forward to that goodness of sweetness!!

Instead to fill my disappointment, I ate a ramekin full of red grapes.

Alright, time to get ready for bed by showering and watching our Sunday night shows! I keep forgetting that my body is going to feel a little off with the time change so I’m hoping I’ll be asleep by 10 p.m. so I can be up and ready for work in the morning!

Listening to My Body

So I headed back out after I posted earlier to finish up my 19 miler.  I am ashamed to say that I only made it to 14.5 miles.  My body started to completely shut down on me.  It was aching and burning everywhere and as much as my heart wanted to keep going that last 4.5 miles, I knew I needed to stop before I injured myself.

Now I’m battling the guilt in my heart from stopping but my intellect tells me I did the right thing.  Throughout reading “Run Less Run Faster” I have read many times that you need to listen to your body.  I listened and now am trying to deal with accepting that I did not complete my whole 19 mile run but that I did just run 14.5 miles and that is great in and of itself!  Just three short years ago, I couldn’t even run more than two minutes straight so now that I’m running these crazy, long distances, I have to be proud of myself.  I know runners have good running days and not so good running days but I just want marathon day to be a good running day for me!  I think it will be because of all the people and energy buzzing around… and of course, adrenaline helps out a ton!

But all in all, I finished up my run strong at 2:40:04.  I was completely on track to finish the whole 19 miles in less than 3:30:00 so I’m proud.  I ran 17 miles in 3:37:00 last week so I’m definitely improving my time slowly but surely.

Also, I failed to eat breakfast this morning.  I know, I know, that’s probably so horrible of me but I won’t make that mistake again.  I am sort of terrified of eating before long runs because of the possibility of side splints.

And I think I need to conquer the hill training on my shorter run days so I don’t wear myself out on my long runs.

So anyway… I think I did great with the distance I did run.  I ran all my miles within 10:30-11:15 minute/miles and that is super improved from last week when all my miles were between 12-13 minute/mile.

I would LOVE to finish the remaining 4.5 miles tonight or tomorrow but I’m going to wait and see how my body feels.  Tomorrow seems more reasonable than tonight so I’m keeping my fingers crossed to wake up with a bolt of energy tomorrow and go run my heart out and redeem myself.  😉

So, I came inside to dig into some food since I hadn’t eaten all day.

I figured a ham sandwich on whole wheat would be a great post-recovery run meal.

Two pieces whole wheat toast, provolone cheese, fresh shaved ham, spring mix, tomato, onion, and a light spread of mayo.  (I love mayo and refuse to take it out of my kitchen.  Moderation is key.)

I added a mandarin for my side instead of chips.  I love these little things!  Can’t you tell since I eat them pretty much daily?!

I’m now going to recover by soaking in a hot bubble bath while reading some more of Bethenny Frankel’s book, “The Skinnygirl Dish” and maybe watch a little bit of the tube for a wind down.
