    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Heavy Eyes

Good morning, Sunday! It feels like it’s 5 a.m. rather than 8 a.m. right now. I’m guessing I fell asleep around 11 o’clock last night so I ended up sleeping 7 1/2 hours but my eyes are still feeling very heavy right now.

I’m being a good wife this morning. The hubs was asked to lead worship at a church across town and I came with him 3 hours earlier than the service starts for his rehearsal. We didn’t think it made any sense to drive two cars so I’m passing the time by blogging and reading.

I’m diving into the book, “Adopted for Life” by Russell Moore who is the dean of the School of Theology where the hubs is obtaining is Masters degree, Southern Seminary.

It makes me so excited and anxious to start the adoption process so we can bring our children home. When I think about it, my heart and body ache to have my chidren in my arms. I can’t wait for those glorious days when we meet for the first time.

Ok, before I let myself get all teary and emotional, I’ll move on.

I grabbed a muesli bar as we left the house so I’d have something to hold me over until lunch.

Carman’s is always a dependable choice. I really love their Apricot flavor.

I already ate half and am saving the other half to eat in an hour or two.

Ok, I’ve been trying to figure out why my appetite has been on steroids lately. It absolutely is relentless and I know it’s not just me making it up in my head when the hubs is even commenting on it. I can’t seem to get full and as soon as one meal is over, I start dreaming about the next meal and so I pine with hunger for the amount of time in between meals.

I think I figured it out. I think I am confusing thirst with hunger. My water intake has drastically dropped since the marathon and I believe that is what is preventing me from feeling satiated. I’m not getting enough water into my system.

So I grabbed a water bottle when we walked out the door this morning and plan on drinking, filling it up, drinking, etc. P.S. I do not buy bottled water as I usually use a refillable bottle to be more green and use less plastic but we have a few bottles from some of my races.

I’m prepared to be properly hydrated today and see if that makes a difference in me pining for food 24/7.

Hopefully this is a simple solution to my problem. We’ll see how today goes. The pastor and his wife are taking the hubs and I out for lunch today and then it’s back home so the hubs can lead worship at our church for the night services. It’s a packed day and night for us folks! See you after lunch!

Never Gets Old

I have to admit. If I could live on one food item everyday for the rest of my life and never grow tired of it, it would be peanut butter and strawberry jelly.

I LOVE LOVE LOVE PB&J’s and have always eaten Lay’s BBQ chips or Sour Cream and Onion Pringles on the side but I’m a big girl these days… okay, maybe I’ve just turned into a big girl since the first of the year but who’s holding it against me? I now try and balance my sandwich out with some fruit.

Today it was an apple and a mandarin.

Wait! How did a piece of oatmeal raisin and pecan cookie jump onto the plate?!

I don’t discriminate so I ate it all. My belly thanks me. And so does the little girl still trapped inside me.

I have a homemade peanut butter chocolate granola bar packed for a snack if I need it.

A Year of Free Starts Today

My free year of receiving a sub sandwich from Lenny’s Sub Shop started today.  The hubs and I decided since I had the day off that we should go and grab a late lunch.

I ordered the #1  on whole wheat which is a ham, cheese and capicola with lettuce, onion, tomato, mayo, black olives, oregano, pepper, and banana peppers.

For all the years I worked with Lenny’s and have eaten there after moving on to nursing school and then nursing as a RN, I never ever tried their red hot pepper relish in which they are known for and now bottle up to sell.  Today was the day to try.  I LOVED it!  I added a little dab on each bite and it added an incredible amount of flavor and spice to the sandwich.

I had some barbecue baked Lenny’s chips on the side.

I really do like these better than Lay’s baked barbecue chips.  They’re a winner in my book for sure.

I packed up half my sandwich for lunch at work tomorrow so I am set with a fabulous lunch!  I love getting two meals out of one.  Don’t you?

Since it was so pretty outside today, we got my car washed while the hubs and I talked about some exciting upcoming possibilites in my life. 🙂

Lexi needed it badly!  She’s been dirty for a long time.

We came home to veg a little while before church tonight and I got a tad hungry a couple hours after eating lunch so I dug into this homemade granola bar that my friend, Lindsey, made and gave to me the other night when we babysat.  I know it has a variety of nuts in it and also some marshmallows.

The hubs and I split it down the middle.  Way to go Lindsey!!  I know you’re still perfecting your own concoction but I thought this was quite tasty!

We’re off to get ready for church tonight.  I think dinner is going to be pretty laid back tonight with some leftovers from our dinner last night but who knows. Maybe we’ll brew something else up in our heads.

Time Flies

I had an absolutely fantastic rest of the day after I posted earlier!  The hubs and I sat on the couch, talking and I ended up falling asleep, sitting up, for 10 minutes, with my mouth open while he was on the computer browsing through guitars.  It was a perfect cat nap.  I forced myself to wake up for good because I needed to eat the rest of my Lenny’s sub and chips and hit the road biking.

I captured a picture of their barbecue chips this time!  I wasn’t in such a rush to gobble it up!

All together now.

It was just as good, if not better than before!  I was quite satisfied.

I got all geared up to go on a bike ride before community group.

Ok, that was pre-gear.  Here’s the gear!

I had about an hour before community group so I biked as hard and fast as I could.  Big mistake to bike towards downtown though.  Traffic was a mess and I had to stop and start a lot at stoplights.  But once it was all said and done, it was a great ride.

I got to community group just in time and dug into the snack I packed.  A homemade peanut butter granola bar and some red grapes.

I biked back home and ended up biking 14 miles total.  See?

I definitely want to build up and be faster on my bike but I know that will take time and I probably need a road bike instead of a hybrid.  But for now it gets me to where I want to go.  And burning over 600 calories tonight wasn’t too shabby for a fun, one hour bike ride.  Booyah!  Take that pavement!

I’m off to wind down in bed.  The hubs is out with the guys tonight doing guy stuff so I’m chilling out and enjoying some alone time.  I have a bootcamp class my friend, Maggie, invited me to at her gym in the morning so I’m starting my day off right tomorrow!  Maybe we’ll go for a run after the bootcamp.  We’ll see how bad it kicks our tails.

Oh yes, and time flies, not only when you’re riding bikes but also when regular life happens.  Four years ago today, I graduated with my Bachelors of Science in Nursing.  I cannot believe it.  Where has the last 4 years gone?!

Do you prefer the gym workout classes, biking, running, swimming, etc. or all of the above?

It depends on my mood but most of the time I’m a runner at heart.  But a good bike ride doesn’t hurt my feelings either.

Crazy for Food

I love food. We know this about me. Clearly. But I also love Lenny’s Sub Shop. Lenny’s originated in Memphis, TN, where I grew up, and was my first job when I was 15. They hired me right out of the line because I was such a frequent customer and always had a smile on my face. At the age of 17, I was promoted to marketer of several Lenny’s stores and had the time of my life. It was, hands down, the best job I’ve ever had. The company is amazing, treats its employees with respect and treats its customers even better. Their food is fresh and sliced right in front of you. No processed food here!

Today is their grand opening of the first ever Louisville location and I was psyched! Even better, I found out they were having a promotion for the opening that said the first 50 people in line received free food for a year! You better believe the second I got put on call from work this morning that my rear hopped in the car to get in line.

I was thankful to find out that my friend, Maggie, and I were numbers 9 and 10! Score!

We’ve been here since 5:30 a.m. and it opens at 10:30 a.m. so only 1 1/2 hours to go! Totally worth it. See how happy we are that we’re about to get a year of free, delicious food?

I brought a variety for breakfast this morning. It was all easy grab and go.

I’m the happiest girl in the world right now. I’m just loving this. So exciting! And the news and radio crews are starting to appear. Who knows, I might get interviewed! 🙂

I’ll be blogging later to fill you in on the rest of the happenings later! Here’s to hoping I don’t get called into work before 10:30. That would stink! See y’all in a bit!

Gourmet Lunch

Lunch was nothing to be ashamed of today.  The hubs couldn’t finish his huge rib-eye steak the other nigth night because it was gargantuan! So I got the leftovers!

Served with leftover asparagus and sweet potato.

Sweet potatoes are still growing on me.  I still would choose a regular potato over a sweet potato but that could be changing.  I’ve surprised myself with what all I don’t eat anymore and now that I do eat!  I love my eating life!

You know that granola bar I didn’t eat for my afternoon snack the other day?

Today was the day!

And I love having such great lunches and snacks!  It makes my day so much more pleasant.  I’m on my own for dinner tonight because the hubs has a meeting.  Who knows what I’ll come up with!  🙂

I sure do love me some burger and chips!  I was glad that I had enough self control last night to resist eating the whole burger and cut it in half instead.

We’re getting together with our community group tonight for a potluck dinner!  It’s Thanksgiving in April tonight because we’re having roasted turkey and all the fixins’, just like at Thanksgiving or Christmas.  I love me a good comfort food meal.  But hopefully I’ll be able to taste everything, eat nothing because I don’t want to overly stuff myself.  I’ve been on an eating spree this week and my body’s feeling it.  But hey, that’s what a rest week after running a marathon is for, right?  Ok, maybe not but I’ll tell myself that just to make myself feel better for stuffing my face like I’m dying tomorrow.

I’m going to love digging into this wonderful homemade peanut butter chocolate granola bar for an afternoon snack!
