    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

No Lunch Day

Before I get to why I titled this post “No Lunch Day” I’ll tell you about my morning.  My morning started off by me crawling out of bed.  My body was so not ready to get up at 5:30 a.m.!  This time change has messed me up!!  But I got going shortly after being awake and headed into work.  I was hungry as soon as I woke up but I ended up holding off eating breakfast until 9 a.m.  I think I’m going to try and start waking up around 5 a.m. on the days I work and making a green monster and spending time with the hubs and starting my day off right.  We’ll see if that ever happens.  😉

I had my favorite new combo of cereal: Kashi H2H Honey Toasted and Special K Granola.  A match made in heaven.

Before I knew it things were kicked into high gear on our floor and with my patients so I didn’t stop to eat lunch until 1 p.m.  Thank goodness our manager had ordered us lunch, otherwise I wouldn’t have been able to eat at all.  Since we were unable to actually take an official lunch “break”, we called it a ‘No Lunch Day’, hence the reason for the title.

I didn’t get any pictures of lunch because we were that busy and I thought cramming food down my throat was a little more important at the moment.  Eat while you can when you’re a nurse.

Our manager ordered us Jimmy John’s platters.  I had 3 small pieces of subs.  One veggie, one tuna and one ham.  I still can’t decide which one I liked best.  I think they’d be ten times tastier if they had whole wheat sub bread available for the platters.

After an hour, I was still hungry so I had another small piece of the ham.

No snack for me today because those 4 small pieces held me over until I got home.

I got home and decided that sent I didn’t get home until almost 8 that I would need to do some strength training tonight instead of running.  I shall run tomorrow night, for sure.

I did a number of different style push-ups (standard, military, diamond, decline and wide legged), pull-ups (wide grip, close grip over handed and close grip under handed), a variety of other back exercises with weights and ab exercises.  I worked it hard and feel great!!  After that hard workout, I deserved dinner!!

On the menu: Grilled chicken, asparagus and a sweet potato.

I tell no lie: This is only the second time in my life that I’ve had a sweet potato. I think I’d prefer a regular potato in the end but I think it’s a good change and healthier too.  Maybe we’ll try sweet potato fries next!!

I ate half of the chicken and asparagus and my whole sweet potato (since it was a smaller tater) and packed all that up, plus half of another sweet potato for a future lunch at work this week!  I love leftovers!!

That’s about it on my end.  I’m needing to wind down for bed and get rested to hit the craziness of the baby factory again tomorrow!!    I might see some fruit in my future before I hit the hay.  But what’s new?!  Hope you all had a great day back into the week!

One Hour Later

Well hello all!  Welcome to Daylight Savings Time!  I am so excited about it staying lighter at night time!  Spring, summer and fall the hubs and I take major advantage of the increased daytime and love to go on evening walks all around Old Louisville.  It’s our thing and I’m ecstatic about it getting warmer and lighter so we can start our routine up again.

I only slept until 9:30 despite the time change so really that’s 8:30 according to my body.  The hubs is now home which I’m ever so grateful that he’s back safe and sound.  He even rented the movie “Precious” for me to watch last night when he got home.  We ended up finishing it this morning because we were so dog tired last night.  It was a good movie but extremely sad and heart breaking.  But a must see for sure.

I decided after we finished up the rest of the movie that I needed some food in my belly.  Someone say waffles with fruit?  Yes, please.

We’re headed to a friends house for a birthday celebration for her husband in just a couple of hours where there will be pizza.  I hate that I’m going to be eating pizza again but I’m going to try and keep it light with just a couple of pieces.

It doesn’t look like I’m going to be able to finish up those remaining 4.5 miles today since it’s rainy and yucky outside.  But my body is extremely stiff and sore from yesterday’s run so it’s probably best.  Hopefully Monday night will be clear enough to hit the pavement.

Well, I’m off to get ready to head to the party in a little bit.  Hope you all are having a great first day of Daylight Savings Time!  See you this afternoon!

Water Logged

Thank you all who commented to encourage me.  It surely lifted my spirits and helped me realize how awesome 14.5 really is!!  You all are the best!

After my lunch post I climbed in a hot bubble bath and ended up staying there for 1 1/2 hours.  I ended up finishing “The Skinnygirl Dish” and enjoying my limbs feeling nice and relaxed in the water.

I’m sure I was nice and water logged by the time I got out but my body felt so much better!!!  I’m thinking that 4.5 mile run will happen tomorrow at some point.  I’m hoping to have my body feel almost back to normal after a good night’s rest so I can redeem myself with my run.

After catching up on many food blogs, I decided it was time to start dinner.  Now as you all know, I’m not usually the cook around here.  The hubs usually has dinner made for me when I come home from work or after I get in from a night run so I didn’t want to be lame and do something I normally would in the past like a sandwich, chips, salad, etc.

I settled on baked marinated salmon topped with sauteed mushrooms placed on a bed of baby organic spring mix, shredded carrots and feta cheese.

I didn’t need dressing due to the salmon being so moist.

I started out placing my marinated salmon fillet in foil and baking it for about 25 minutes at 350 degrees.

I sauteed my mushrooms.  I drizzled them with EVOO and topped them with fresh cracked pepper and salt and a tad of garlic salt for added flavor and cooked in the skillet on medium heat, stirring and flipping constantly to avoid burning.

Before cooking:

I figured that part of the Italian style bread that I brought home last night from dinner would be an appropriate carb to add.  I put some EVOO in a ramekin and topped with fresh cracked black pepper for dipping and warmed up the bread in the oven.

Now everything together!

Ok maybe not everything… forgot the mushrooms!

And I might have had one or two more pieces of bread. 😉

I think I did pretty good if I do say so myself.

It was definitely worth it to take the time and effort to prepare a home cooked meal, even if I was just cooking for me.

I might see some fruit in my future but for now I’m pretty content.

Can’t wait to wake up in the morning and see how my body feels!  Praying for a good opportunity to get that run in!!

What’s a good meal that you’ve made for yourself lately?

Listening to My Body

So I headed back out after I posted earlier to finish up my 19 miler.  I am ashamed to say that I only made it to 14.5 miles.  My body started to completely shut down on me.  It was aching and burning everywhere and as much as my heart wanted to keep going that last 4.5 miles, I knew I needed to stop before I injured myself.

Now I’m battling the guilt in my heart from stopping but my intellect tells me I did the right thing.  Throughout reading “Run Less Run Faster” I have read many times that you need to listen to your body.  I listened and now am trying to deal with accepting that I did not complete my whole 19 mile run but that I did just run 14.5 miles and that is great in and of itself!  Just three short years ago, I couldn’t even run more than two minutes straight so now that I’m running these crazy, long distances, I have to be proud of myself.  I know runners have good running days and not so good running days but I just want marathon day to be a good running day for me!  I think it will be because of all the people and energy buzzing around… and of course, adrenaline helps out a ton!

But all in all, I finished up my run strong at 2:40:04.  I was completely on track to finish the whole 19 miles in less than 3:30:00 so I’m proud.  I ran 17 miles in 3:37:00 last week so I’m definitely improving my time slowly but surely.

Also, I failed to eat breakfast this morning.  I know, I know, that’s probably so horrible of me but I won’t make that mistake again.  I am sort of terrified of eating before long runs because of the possibility of side splints.

And I think I need to conquer the hill training on my shorter run days so I don’t wear myself out on my long runs.

So anyway… I think I did great with the distance I did run.  I ran all my miles within 10:30-11:15 minute/miles and that is super improved from last week when all my miles were between 12-13 minute/mile.

I would LOVE to finish the remaining 4.5 miles tonight or tomorrow but I’m going to wait and see how my body feels.  Tomorrow seems more reasonable than tonight so I’m keeping my fingers crossed to wake up with a bolt of energy tomorrow and go run my heart out and redeem myself.  😉

So, I came inside to dig into some food since I hadn’t eaten all day.

I figured a ham sandwich on whole wheat would be a great post-recovery run meal.

Two pieces whole wheat toast, provolone cheese, fresh shaved ham, spring mix, tomato, onion, and a light spread of mayo.  (I love mayo and refuse to take it out of my kitchen.  Moderation is key.)

I added a mandarin for my side instead of chips.  I love these little things!  Can’t you tell since I eat them pretty much daily?!

I’m now going to recover by soaking in a hot bubble bath while reading some more of Bethenny Frankel’s book, “The Skinnygirl Dish” and maybe watch a little bit of the tube for a wind down.

Carbo Loading & Girls Night

Well, to my surprise, the hubs left the computer with me so here I am blogging after my girls night out!!  This should be quick because I need to get up and run 19 miles tomorrow.

I’ll start with pictures with some of the girls from tonight.

You wouldn’t have guessed it since I only got pictures on my end of the table but we had 21 people show up.  That’s a great round of people for our first work outing.

Anyway…. I ended up completely changing my mind about what I was going to eat.

I did end up eating the Italian bread… a few several pieces with olive oil.

Ebony, Beth and I ended up splitting a large (much too big for us three) whole wheat supreme pizza.  I had two slices.

I almost reached up for a third but decided against it since I had several pieces of bread.

I ended up taking home a loaf and a half of the Italian bread and 4 leftover slices of the supreme pizza so Chad can have that for a super late dinner tomorrow night when he comes home.

I have no idea what I’m going to eat for lunch and dinner tomorrow night but I’ll figure it out I guess.  I’ll need something good and full of protein tomorrow after my run.

Alright friends, I’m off to bed (and feed the kitty babies and hopefully cuddle with them)!  Pray that I’ll get my booty out of bed early in the morning so I can get my run over with early in the day so I can veg and recover from my run.

Wish me luck!!!  I’m hoping to run around 10-11 minute/mile pace tomorrow and not my usual 12-13 minute/mile pace.

A Little of This and A Little of That

That’s exactly what my lunch consisted of today.  I didn’t really have any set lunch planned out so I just threw together a mixture.

Roasted red pepper hummus with wheat crackers, manadarin, red grapes and dry roasted almonds.

I’m glad I kept it pretty light because I’ll have such a starchy, carb loaded dinner tonight with the girls.

This morning I spent pretty much in my office bed reading blogs and catching up on the good ole Tivo.  I finally decided that it was time to get out of bed and get some things accomplished in case I got called in.  I haven’t gotten called in yet, obviously, so here’s to hoping that I have the rest of the afternoon off.

Anyway… I ended up working my booty out with some leg strength training, mixed with a tiny bit of arm strength training and some major ab work.  My abs and legs were burning.  I love feeling that burn!!  As I was on the ground, close to the ground, squatting in one spot, I noticed some things that needed to be cleaned.

So I hopped to it and burned up some more calories lifting furniture, vacuuming, loading the dishwasher, wiping things down and folding and putting away laundry.  I haven’t tackled the bathroom yet so maybe I’ll do that tomorrow.  That’s my least favorite spot in the loft to clean.

I count my day as having been productive!  It’s yucky, overcast and rainy outside and I’m fervently praying that the rain will stop by tomorrow so I can get my 19 miler in!! Eek!

Alright, the hubs is leaving soon for his overnight trip and taking the computer with him so hopefully the lighting will be good enough at the restaurant tonight to take a few pictures of the food with my iPhone so I can post later tonight or tomorrow.  If not then I’ll just shoot away with my camera and wait until he gets home tomorrow night to post.  We’ll see.  Keep checking in.  I might surprise you guys with a post!  😉

An Epic Fail

So who said that she thought she was going to be put on call from work today?!  Yep, I guessed it.  Thank goodness because I was dog tired.  I ended up sleeping until 8:30 and figured it was time to get my rear out of bed and make breakfast.

Since I had the morning off with the hubs I figured another hot breakfast would do the trick.  I decided that I would give old fashioned rolled oats a try.  As you all might remember (or some of you might not), I tried steel cut oats a few weeks ago and it was pretty bad.  I was not a fan… at all.  Ok, so I figured that maybe I would like old fashioned better.  I have come to understand or learn that steel cut oats has a completely different texture than other oats.  Since I put these wonderful old fashioned rolled oats in my homemade peanut butter granola bars and liked them I thought I would LOVE them as hot oatmeal too.

I desperately want to love oats.  I see so many food bloggers with their awesome looking oats and they rave about them.

So here I am fixing up my oats feeling totally optimistic and it comes out looking great.  I added a dash of milk, flaxseed, half a nanner, agave, peanut butter and a sprinkle of brown sugar.

Doesn’t it look so comforting?  My verdict: AN EPIC FAIL!!  I took about 5 small bites and was dunzo.  I just do not like the texture at all.  So I’ve decided, if I eat oatmeal ever again… it will be my highly processed instant fruit and cream quaker oatmeal.  I’m pretty sure that won’t be happening again because it is so highly processed but that’s the only kind I approve of.  Or maybe I just like the instant oats better.  So I could try some other brands like Kashi.  It’ll probably be a while until I get this lingering gross taste out of my mouth but maybe I’ll try again someday.  But for now I’m content with whole wheat waffles, toast, eggs, Morningstar “sausage”, bagels and cold cereal.

I gave it a good ole college try twice now and can’t force myself to like something.  So after I discarded my oats, finished the other half of my nanner and dove into a bowl of raisin bran cereal.  Ah… that’s what I love.

I’m hoping to try out a Green Monster sometime in the future for breakfast as well but we’ll see.  One step at a time.

Well not too much is on the agenda today since I’m ON CALL!  I need to get some major strength training in so hopefully that’ll get accomplished.  I’m trying to figure out what to eat for lunch later since I’m eating Italian with the girls from work tonight.  I want it to all balance out and not have too many breads and starches in one day.  But I’m so proud of myself.  I pulled up the menu for the Italian restaurant a few days ago to plan my meal ahead and another co-worker and I decided to split an entree.  She’s on weight watchers so she needs portion control and I just can never finish full restaurant servings of pastas so we decided we are going to split the spaghetti with meat sauce.  And the great thing?  They have whole wheat pasta you can choose instead of regular pasta.  Woo hoo!!  They also serve a bottomless salad and Italian style bread with each entree too so this will be a good carbo loading meal but I don’t think I’ll over indulge since I’m splitting with someone else so I’ll allow myself to enjoy some bread and salad too.

Sad that the hubs leaves to go out of town today.  At least he’ll be back sometime tomorrow evening and I’ll be able to go for a 19 mile run tomorrow without sacrificing weekend time with him.  Pray that the sun comes out because I don’t feel like or forsee myself running in the rain.  Alright, I’m rambling at this point.  Off to do something… who knows what but hopefully I’ll be blogging after lunch.  But if not after lunch then definitely after dinner.  Hope you all are having a great Friday so far!
