    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Community Supported Agriculture

Before I get into too much I figured I’d tell you all what happened last night.

After I blogged, I ended up doing some arm, shoulder and ab strength training.  I got ready for bed shortly after and decided to look at my poor toenail that was hanging by a thread.  Lo and behold, I discovered that a new toenail had already grow in under the older toenail.  I guess that all started happening when I started marathon training because it had apparently been lifting off the nail bed for a while.  I was extremely happy about this.  This meant I could cancel my podiatry appointment, wear toenail polish this summer and not have a jacked looking toe for the rest of my life.  So I proceeded to take the old toenail off.  I got it 99% of the way off and realized the right side was still attached deep into the cuticle bed.  I then proceeded to be even more bull headed and poked and prodded on my toe for over an hour.  With no such look of having it budge, I decided to stop.

I headed to bed and fell asleep by 10:30, only to wake up at 1 a.m. with a throbbing, pulsating pain in my toe that I had worked on.  Being even more stubborn, I decided the only solution was to work on it some more and get that last part out of my skin.  After another hour of nothing, I sat there and just cried.  What had I done to myself?  I wrapped it with a bandaid and tried to lay back down and sleep.  After a long while of it throbbing, I guess my finally was exhausted enough to fall back asleep.  So needless to say, I didn’t get much sleep last night and my toe still hurts majorly.  I spoke with one of our doctors at work today who has run several marathons and he even looked at my toe and said it looks like it is infection free and that I just need to keep it covered and let the new nail push that part of the old nail out.  No running until that happens though!  So I was just completely exhausted from last night.  Me and my stubborn self, all my fault.  My mind immediately went to seeing my toe having to be amputated, all because of me being so head strong.  Thankfully it is already feeling better and I’m keeping my hands off.  So pray for a quick and speedy recovery and no infection.  I’ve definitely learned my lessons from all this toe drama.

Alright… onto the rest of the day.  We had an afternoon nurses reception and they had much better choices to eat than this morning’s reception.

I ended up not eating but one veggie wrap because they were so dry.  I loved everything else though and might have had a few spoonfuls of chocolate too.  Because that’s how I roll.

Hence the reason I am completely not hungry for dinner tonight.

I biked home in some hot, humid, muggy, 80 degree weather and was extremely excited to open our refrigerator and see this.

And then I saw this on the counter!  All free stuff from Kraft foods.

Ok, onto the big blue box which is NOT from Kraft foods.

It’s from the CSA (Community Supported Agriculture) that we joined this year.  We’ve been interested in joining a food co-op and thought it was the perfect opportunity when some of our friends from church decided to start their own with a farm they bought just a few miles away from Louisville in New Albany, Indiana.

For 26 weeks we will be receiving fresh fruits and veggies at our doorstep.  This was our first week and we couldn’t wait to see our goods.  We believe this is a great way to continue to eat organically for a fraction of the cost of what it would cost to buy at the store and support our local farmers, or in this case, friends who are breaking out into this venture.

I can’t wait to dig in.  The first few weeks will be a lot of spring, lettuce mixes but I can’t wait to watch our boxes grow as the season matures!  I’ll definitely be eating things I’ve never tried before or that we’ve never cooked at home.  It’s going to be a fun 26 weeks!

We also will be receiving a dozen farm fresh eggs every 3 weeks as well.  We had the option of a weekly dozen but we definitely don’t eat eggs that often so I think every three weeks will be just right.  And who knows, we might be receiving fresh chicken to be cooked too!  We’re extremely excited about this opportunity.  You can count on me definitely sharing all of this new knowledge with you as we jump on this venture.

I decided I needed a little fruit to balance out all the carbs and chocolate I ate today to cap me off for the night.

I’m perfectly content now.  I’ve showered, packed the lunch for work tomorrow and will definitely be in bed and chilled out way before my 10 o’clock bedtime goal!  Hope you had a happy hump day!

Creative Juices Flowing

As you will be able to tell, my creative juices were really flowing last night as I packed my lunch. I’m aiming daily to put more effort into what I eat, how I prepare it, what it looks like plated, etc. I feel like it makes the process of eating it just that much more enjoyable and satisfying. And obviously it looks prettier in pictures too!

I ate pretty carby yesterday so I decided veggies were in order today for lunch.

I got all my things set out and ready to cut them up last night.

Always a little sprinkle of feta because feta makes it BETTA! And cracked black pepper too.

I had celery left over and thought some hummus on the side with a few crackers would be perfect for some more crunch and flava!

I broke into the red roasted pepper hummus I bought at Whole Foods and dare I say, I wasn’t as impressed with the flavor like the Athenos I usually eat.

At least I tried it! I think that was a perfect lunch! And for a snack later I’ll eat the snack I had packed for yesterday! Oikos blueberry Greek yogurt with some Bear Naked granola.

What a fabulous day of eats so far. I think tonight is grilled chicken, salad, roasted broccoli and maybe some Annie’s mac and cheese. We’ll see what’s presented to me upon my arrival home!!

Derby Fun

It’s only 8:30 at night and we’re already back from our Derby festivities.  Party animals, aren’t we?!  I’m a wild woman, let me tell you.  Bedtime at 10?  Doesn’t everyone go to bed that early?  🙂

I was sent home early from work, which I expected so I headed home, washed my hair, painted my toesies and fingers, and donned my swankiest black dress and heels (Thanks Kate Spade for always being there for me) and off we went.

Ok, I’ve discovered I have a problem.  I am all about Bethenny Frankel’s food philosophy’s or should we say food rules in her book, “Naturally Thin” but I’m thinking I need to read this book everyday to feel in control over my food choices.  Alright, here’s the nitty gritty.  This past week I have indulged in anything and everything I want.  I have not shown all the little sweets I have popped into my mouth every evening but they are there and sometimes in copious amounts.  I was doing really well on the eating in moderation thing but this week, after the marathon, I have just felt the need to overindulge and I don’t know why.  So strange.  Oh wait… now that I think about it, I know why.  It’s those dang hormones that go raging every month!  Eek!  Totally forgot about that.  Whew, I feel better now.  But still… I have really not been treating my body well at all so please forgive me for this horrible week of eats.  Tomorrow is a new day (I feel like I say this a lot) and I am vowing to myself (and you) that I will treat my body well from now on.  That doesn’t mean I won’t eat sweets ever again but I’m totally putting more crap in my body than I should.  So knowing that you all know my little secret now, I’m hoping I’ll be more accountable to myself because I know it’s out there in the open.

Ok, I feel better now just getting that off my chest.  It’s actually an early night for me so I’m going to turn in and settle down for the night.  I have to work the next 5 days so I need some rest!

Update on my feet: My toes feel better today.  Not completely 100% but much better!  I’m hoping by tomorrow night or Monday night, I’ll be running again.  Oh Lord please!  I need to run for my sanity!!

Hungry, Hungry Hippo

A hungry, hungry hippo is what I was today!  I guess my body’s trying to catch up on all the calories it burned this past weekend but boy is it relentless!!!

After breakfast this morning, I couldn’t wait to dig into lunch!  I packed half a ham sandwich topped with cucumber, spring mix, onion, tomato and mustard.

I was still super hungry so I went ahead and ate the snack I had packed for the afternoon.  A peanut butter chocolate granola bar from my batch that I made last week.  Oh so good!

Not even a few hours later I was ravenous again!  This time I had some graham crackers and peanut butter. Unpictured!

By the time I biked home, I was hungry yet again!  I was so glad to smell some good stuff cooking when I got home!

I ate half the chicken, all the asparagus, half the potatoes and half the roll.  I packed the other halves up for lunch tomorrow.

Honestly, it wasn’t the best meal we have cooked but oh well.  Tomorrow’s always a new day.

I had to return the movie we rented the other night because we kept forgetting to take it back to the Redbox so I biked up the road to our Kroger to return it and pick up some corn for a potluck dinner we’re having with friends Thursday night.

At least I got a little more exercise in.   I’m just dying to strength train or run!  Really, I’m just dying to run but know I need to rest the remainder of the week.  Friday, I think, will be the day I jump back on the pavement.  At least I hope it is!

I biked back home to have some cake and ice cream for dessert.

It’s almost all gone!  Sad day when that happens but probably good too because I could see it packing on the pounds I lost during marathon training and I’d like to stay the weight I am now for good.  We shall see!

Actually, I have decided to pack the rest of the cake up to take to the girls at work tomorrow.  I have got to get it out of this house!  All this sugar I have been inhaling has actually made me hungrier I think with my blood sugar spiking.  I just can’t seem to feel fully satisfied after I eat dessert.  And I’m feeling more and more like crap.  Not light and clean.  Maybe I need to make a new once a week dessert rule…. hmmm… decisions, decisions.

I hope your Tuesday treated you well.  I’m off to make all my meals for work tomorrow and settle in for bed.  Nighty night friends!

Lunchy Lunch

It was lunch time at the Watson house and I was ready!

I didn’t feel like eating too much food but I wanted something crunch, savory and sweet.  I went with some crackers, half topped with roasted red pepper hummus and the other half topped with half of a Laughing Cow garlic and herb cheese wedge.  The rest of my breakfast was also devoured.

I think I met my fruit quota for the day.

Mom ate the other half of my laughing cow cheese and one of my homemade granola bars.  I got her stamp of approval on the granola bars.  It made me happy!  🙂

We’ve been watching Tivo’ed Oprah’s all morning and now we’re finally willing to get ready and head up to my place of work to show mom around.  Who knows what the rest of the day holds.  At least the sun is trying to peek through the rain clouds!  There is hope yet!

Eating When I’m Hungry

Happy Earth Day!

I can’t believe I’m just now blogging at 3 o’clock!  I’ve had a full day so far!  I woke up at 5 a.m. and drove to meet my friend, Mandy, at her house for a quick, easy, 2 mile run.  The last run before the big day on Saturday!  We had a fantastic run.  I felt amazing out on the pavement and ended up chatting it up with Mandy the whole time.  I’m usually not a talker while I run so I was surprised how much at ease I felt while running and talking.

After our run, I headed home, got a shower and climbed back in bed for a couple of hours.  I just did not get enough sleep last night so I needed to get in some more snoozing so I’d have enough energy for the rest of the day.

I woke up and got ready to head to an endodontist appointment and then it was off to pick up my race packet for the marathon!

I was so proud to be in the short line of the marathoners.  It was crazy where the half marathoners were picking up their packets!  I walked out with some sway and even bought a Bondi Band from Ryan to wear during the marathon to keep my hair and sweat off my face.

I was pumped to get a sample of these sports beans!  I’ve been wanting to give them a try.

I also received a package in the mail today!  I love receiving packages!  You won’t believe how far it traveled!

I quickly got to cleaning after I got home and settled with all my new swag because my surprise guest is coming in today!  They should be here really soon and I’m excited!  But I needed to clean up the loft first.  Lots of work but it’s done and looks great and is ready to be invaded by this special person!

After cleaning, it was 2 o’clock and I realized I still hadn’t eaten anything all day.  Oops.  Oh well.  I just want to eat when I’m hungry and it finally hit me that I needed something in my system. Maybe I wasn’t hungry until later because of all the dense desserts I ate last night.

It was a hodge podge of things today but I thoroughly enjoyed it!

Perfecto!  I feel satisfied and knowing that I’ll be eating dinner in just a couple of hours is great because I ate just enough to get me through.  We’re taking mom to The Oakroom at the Seelbach Hotel tonight before our Community Group is to meet and I can’t wait! You shall be seeing lots of decadent pictures from tonight’s dinner, I’m sure!  See you later gators!

Green, Green, Green

I love all the things you guys are doing in order to honor Earth Week. Those are great things I could incorporate into my everyday life!

It’s a green lunch sort of day! Lots of veggies for this little one in Louisville! Since I ate a freaking Dairy Queen blizzard for DINNER last night, I decided to eat clean and light today.

A spring mix salad has done the trick!

Topped with some shredded cheese, carrots, cucumbers, onion and Italian dressing

With three of these amazing whole grain crackers and some red pepper hummus on the side.

I’m off to dinner after work tonight with some folks from church at our new church building for a meeting about the vision for the future of our church. I said church a lot in that one sentence, didn’t I? 🙂 It might be a later post tonight since we’re doing dinner and a meeting so keep checking in. I have no idea what they are serving but I’m keeping my fingers crossed there will be healthy/semi-healthy options for me to dig into.
