    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

    I'm always learning and discovering new foods, recipes, workouts and ways to live a healthy lifestyle. Join me on my journey towards becoming my healthiest self.

Never Gets Old

I have to admit. If I could live on one food item everyday for the rest of my life and never grow tired of it, it would be peanut butter and strawberry jelly.

I LOVE LOVE LOVE PB&J’s and have always eaten Lay’s BBQ chips or Sour Cream and Onion Pringles on the side but I’m a big girl these days… okay, maybe I’ve just turned into a big girl since the first of the year but who’s holding it against me? I now try and balance my sandwich out with some fruit.

Today it was an apple and a mandarin.

Wait! How did a piece of oatmeal raisin and pecan cookie jump onto the plate?!

I don’t discriminate so I ate it all. My belly thanks me. And so does the little girl still trapped inside me.

I have a homemade peanut butter chocolate granola bar packed for a snack if I need it.

My Rest Day

Here’s what my rest day has looked like:

Church, sleep, lunch, sleep, make food for work tomorrow, blog, shower, watch TV, sleep.

Oh, and wrap my toes!  I’m trying to save that second toenail but I don’t think it’s going to happen.  Both my water blisters have been opened and I’m hoping my toes feel back to normal soon.  At least my toes are painted a cute color!  The first paint of the flip flop season!

I kid you not, my day has been comprised of 90% sleep.  I woke up this morning around 8 to get ready for church.  Thank goodness I only took 1/4 of that muscle relaxer last night because I was wasted!  I just did not want to get out of bed.  But knowing the hubs was leading our church in worship this morning made me happy to get out of bed.

Yeesh… I didn’t realize how hard it would be to physically get out of bed.  My legs felt like they were 100 lbs. each!  My quads were tight and burning like no other feeling I’ve ever felt after a long run before.  I got ready and forced myself to walk down the 4 flights of stairs in our building instead of taking the elevator in hopes of stretching them out a little bit.  I looked like a doofus hobbling down the stairs.

This is me today… for sure.

After church I came home, ate an unpictured mandarin and climbed into bed where I planned to stay for the rest of the day.  I found myself waking up to the hubs calling telling me he was on his way home.  Oops… I had already fallen asleep!  He came home, we made lunch.  I couldn’t wait!  I was STARVING!

A turkey frank for me on a whole wheat bun with mustard, ketchup and relish.

With some Harvest Cheddar SunChips that they put in my bag after the marathon yesterday.  Total yum!!

All together.  Notice half a chocolate chip cookie.  It was a must!

Ok, I was still starving well after I ate this so I thought cake and ice cream was in order.  Guess I’m making up for all those calories I burned yesterday.  You think?

After eating this… I ate… just kidding!  I was completely satisfied.  Not too full at all!  My belly just wanted some more sweets. I cannot deny it what it wants!  I must oblige.  🙂

The hubs and I started to watch SNL from last night and I found myself at 5:30 waking up!  Oops… another long napper!

Upon waking up, the hubs gave me a full body massage.  It hurt so good!!  I am back to work tomorrow with bending, moving around, lifting, etc. and I know I’m going to be hurting so I’m glad the hubs helped me break up some of the lactic acid that has built up in my body from yesterday.

We had planned on making a super dinner tonight but both of us are totally not hungry at all!  So I got to working in the kitchen with making my breakfast, lunch and snacks for tomorrow.  Love when I’m productive and get my act together early in the night so I can chill the rest of the time!

I’m off to shower, relax and get a whole night’s rest because it’s back to the baby factory tomorrow.  Life doesn’t stop when you’re a marathoner, apparently!  The world keeps on spinning and I keep on working.  It’s been an absolute dream of a weekend and I still haven’t woken up from it yet.  Hope yours was just as fabulous!  See you in the morning!

Confession Time

Ok, the day ended up being crazier than yesterday!  AGH!  The labor and delivery floor whooped my rear end today!  I mean, seriously!  Thank goodness I have the next 4 days off.

I didn’t even eat an afternoon snack because it was so crazy.  You know it’s crazy when I don’t find time to fit in my meals.  🙂

I biked home, met the hubs in our parking lot and biked over to a friends house to celebrate her birthday.  Desserts for dinner!  My fave!

Happy Birthday Glenna!!

Oh how I love Glenna!  She is such a sweet spirit and I am thankful to have her as a friend in my life.  She’s so sacrificial with her love that she is even willing to bandit the last 4 miles with me during the marathon to give me a boost and a friendly face to run with!  Sacrificial people, sacrificial!

Her hubby, Matt, made three different desserts for her!  So sweet!

First up, strawberry filled wontons!

Second, a huge chocolate chip cookie!

Thirdly, a funfetti cake!  He substituted eggs with applesauce to make it slightly healthier and less fattening.  Thank you Matt!

I took a couple bites of each offering.  Oh yes, there was cookies and cream ice cream too!!

I might have had another bite of cookie and a few more bites of ice cream.  Don’t judge.  This was my dinner!  🙂

I was still hungry many many minutes later so I figured, instead of going back for more, to eat an apple and some peanut butter.

Ok, the apple sucked.  It tasted nasty!  So weird!  I’ve never had an apple that tasted bad, I don’t think?  So after a couple of bites, I just ate the rest of the peanut butter instead and threw away the apple.  No point in eating calories that don’t taste good, amen?

So I have a confession… Hello, my name is Lauren and I am a dessert-a-holic.  Can’t you tell?  Ever since Lenten season ended, I don’t believe I’ve gone a day or night without some sort of sweet treat or dessert.  I, am personally, totally okay with this but is this bad that I eat sweets so often?  I just love them so much!!  I feel like I’m balanced in my regular meals and eating but I do seem to have desserts for dinner a lot.  I tribute it to my crazy nursing schedule of working twelve hour shifts.  Sometimes I just can’t get in a dinner before going over to a friends house.  And a lot of our friends like to get together for dessert because it’s usually after the time normal people eat dinner.  Anyway, I guess I’m just feeling a little sugar overloaded tonight after what I ate but I’ll try to do better tomorrow.  Can’t beat myself up too much.

My secret person comes in tomorrow and I’m more than pumped to see them!!  I’m also waking up at 4:30 a.m. to meet my dear friend, Mandy, for a 5:30 a.m., two mile run!  My last run before the marathon on Saturday!!  Then it’ll be home to maybe take a nap before I have to get some other things accomplished tomorrow.  Things don’t look they are slowly down at all until AFTER the marathon.  Yeesh.  Busy body I am!  See you in the morn’!

Back on Schedule

I planned on blogging when I got home last night from Thunder Over Louisville but it was almost midnight by the time we got home, showered and settled in so I decided it was best to get some rest and blog this morning!  So good morning world!

Last night we had a great time with friends.  We met at a friends house for dessert and that’s all I ended up eating the rest of the day.  I fell asleep for an hour nap yesterday and decided to run today instead of yesterday so I enjoyed getting much needed rest.  When I woke up and started to get ready to bike over to our friends house, I didn’t feel hungry so I wasn’t going to eat just to eat.

We biked over to our friends, talked for a little while then dug into dessert.  Glenna made a strawberry shortbread pizza that was super tasty.  The hubs and I split a piece.  I had about 1/4 of the piece we split and then a little while later went back and had another 1/2 piece.

We brought our cake balls for everyone and I didn’t eat any but they sure were a hit among the crowd!

Mark made these orange cookies and they were so cake like and moist that I had two of them.  Super yum!

Then Dinah showed up with oatmeal cookies.  I ate two of these delicious cookies.  I figured I could eat two because the oatmeal was a little healthier than the sugar in all the other dishes.  🙂

We all walked down to the river to watch the fireworks and boy was it (a) crowded (b) super chilly and (c) windy as heck!

Can you tell we’re cold?

We ended up squeezing our way into the front of the pack right at the riverfront and watching from there.  This is possibly probably our last year to live in Louisville so we figured we needed to see the world’s biggest fireworks display in person at least once!  They went off 15 minutes late!  Errr… I was so cold that I was dying for them to start.  But once they started the time passed quickly.  Twenty eight minutes of these.

We ended up walking over 5 miles last night to and from the river so we definitely got a workout in!  But then the hubs and I had to bike home in the crazy traffic… at least we got home safe and sound.  It was chaos out there!

After falling asleep at 1 a.m. (Crazy!!!) I was up, bright eyed and bushy tailed at 7:30 this morning!  Back to my normal schedule.  After a few minutes of lying in bed, watching Tivo shows, and chatting with the hubs, I decided it was time for some breakfast.

We bought more whole wheat waffles at Fresh Market the other night and strawberries at Kroger yesterday… perfect combo for breakfast!!

With a drizzle of Pure Honey that we bought at the Farmer’s Market yesterday.

It’s bright and sunshine-y here in Louisville today!  I haven’t figured out when I’m going to go on my 7 mile run yet.  My right hip started bothering me last night while we were walking.  It just feels like there is a muscle that pulls every time I take a stride.  It started feeling like that off and on after my 21 mile training run 3 weeks ago.  I’m trying to listen to my body and not push it too much since I’ll be running 26.2 miles on Saturday.  I’m off to enjoy the day and whatever it may bring!

What’s your advice on this muscle pull in my right hip??

Snacking Along the Way

The rest of my day was gloriously spent laying out, cleaning, baking cookies and Community Group.

I ended up snacking throughout the rest of the day and not really eating a specific “dinner”.

First up was a mandarin.

Then it was half of a Danon vanilla flavored yogurt with added Bear Naked granola.

Last but not least it was an apple after we biked to community group. No peanut butter this time around.

I had to have a couple of tiny chocolate chip cookies I baked earlier!

When we opened up our door to take our bikes downstairs to bike to Community Group we had these gorgeous things sitting by our door.  I took a picture of every side so you could enjoy them as much as I am enjoying them!

They are absolutely gorgeous and smell divine!!  They are from a sweet, sweet friend who we’ve met with a couple of times to talk to and walk through a stage of life with and she sent us these for a thank you!  How amazing is she?

I had to take a picture of the card she wrote because I think it is one of the sweetest cards I’ve ever received.

This has put a smile on my face and a warmth in my heart.

I am now off to bed and am pretty sure I will sleep well tonight.  I’m scheduled to work tomorrow but it wouldn’t surprise me if I got put on call.  But I’m prepared either way.  See you tomorrow!!!
