    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Trusty Breakfast

Good morning friends! I slept beautifully last night and was up and ready for a blood pumping bike ride into work this morning but woke up to wet streets and a drizzle of rain so felt it best to drive into work instead. I hate when I’m unable to bike!! And it looks pretty grim for the rest of the week too.

But on a bright note, I loved my breakfast this morning. A mix of two of my favorites, as you all know.

Which looks like this out of the boxes.

I could eat both of these dry, right of the box, by the handfuls. So yummy. Why oh why do I love cereal so much? Oh wait I know… crunchy, cool, easy, tasty and the list goes on.

I felt like eating some fresh grapes too.

I drink fat free milk while I’m at work and 2% non-organic at home but the hubs and I have been really wondering which organic milk we should start investing in. Kroger Private Selection Brand, Horizon, Non-Homogenized, Fat Free, Skim, 2%?

What kind of milk do you drink?

Weekend Working

I’m not shy about this: I do not like having to work weekends but I have to.  Every third weekend I have to work and it stinks.  Not because it sucks on the floor on the weekends but just the fact that I’m away from fun activities and time with the hubs!  So I’m here, on a Saturday and making the best of it.

It is raining cats and dogs around here.  Yucky weather for Derby day, that’s for sure.  I haven’t driven my car to work in weeks and weeks because we’ve had such great weather for me to bike.  It was weird for me to hop behind the steering wheel again.

The Kashi H2H Honey Toasted cereal sprinkled with Special K’s Low Fat Granola helps a little bit with having to come in on such a dreary day and a Saturday for that matter.

It’s Derby day in Louisville and I’m sure the streets are crazy out there!  Glad I’m not in the midst of the traffic and the rain!  I do hope to one day attend the Derby in high style but today was not that day.

Derby Time!

It’s Derby time here in Louisville and we have some gorgeous weather today for the first set of races for Oaks Day! I love all the festive spirit in the air.

I decided since today was going to be a pretty warm one (85 degrees)! That is was a cereal sort of morning.

We’re off and running with a full day of errands on my only day off for the next week! First up: Teeth cleaning then it’s on to grocery shopping (my fave) and hopefully some laying out, catching some sun and a run later!

I woke up this morning and my toes are actually hurting worse then they have been! UGH! So I’m hoping I’ll be able to run later because you all know how much I’ve been looking forward to it!

Hope I’ll see some crazy Derby outfits while we’re out and about! See you later!

A New Day

It felt so good to bike into work this morning and bring the rest of the cake with me!  That thing was heavy in my Chrome bike bag for sure, yo!  I was glad to have it out of the house!  It is so amazingly good but not great to be eating everyday for a week!

I decided that since today is a new day and I have been on a sugar splurge since Lent ended (I kid you not, I have not skipped a day of eating dessert since it ended over three weeks ago!) that I would start it off with some good Kashi Autumn Harvest cereal.

You just can’t go wrong with Kashi!  But you all know how much I love Kashi and cereal in general.

Guess what tonight is? It’s 31 cent/scoop night at Baskin Robbins!  And guess who won’t be participating this year?  That’s right!  Me!

We are going out to grab dessert at our wonderful Dairy Kastle tomorrow night after a potluck dinner and I’ve decided that will be my dessert for the week.  It’s time to increase the intake of veggies and fruits like major!  If I can go over 40 days without eating dessert than I can go 6 out of 7 days a week without eating it.  Ok, I might not be sticking that hardcore to the one dessert a week rule but I’m going to try… I promise.  You all need to help keep me accountable!!

Ok, enough about dessert… I’ve got to run!  I shall see you all at lunch!

Workity Work

Well, here I am, back at my place of work. My 4 days off went by super quick and I can’t believe I’m back to the grind! I decided to stretch my legs out again with a bike ride to work this morning. I was sure to leave a little earlier than usual to give myself extra time because of my heavy, tight, sore quads. I think it was worth it though! And it was the most peaceful bike ride I’ve had in a long time. I’m so thankful for where I am at this point in my life

I got a great night’s rest especially since I was put on call this morning! I got some major hours of sleep! But they called me in around 9 so here I am, back at work which is fine with me.

Breakfast was a mix of Arrowmill’s Puffed Wheat cereal and a sprinkle of Special K’s Low Fat Granola that I love oh so very much!

Perfecto!

I can’t believe I’m back at work still after such an amazing long weekend! I hope Monday is treating you well! I shall see you at lunchtime!

I’ve Missed You

Oh cereal, how I’ve missed you and was glad to have you back in my life this morning!!

Good morning lovelies!  Back at work for day 2 out of 3 before I’m off to rest up for the big day on Saturday!  I had a great bike ride in and am really so grateful that the weather has allowed me to bike in almost everyday lately!  I feel like I’m being such a better advocate for the environment when I bike.  And the fact that it’s Earth Week makes me feel even better!

I really do love this Kashi Autumn Harvest cereal!  But let’s get real, what Kashi cereal doesn’t taste amazing?!

All day yesterday it felt like Tuesday so I’m trying to figure out what day it really feels like today!  🙂  I’m off to run around the unit and make myself a little busy bee….

Wishy Washy

Last night after I left you all, the hubs ended up cooking himself a bacon, egg and cheese sandwich on whole wheat toast.  He had enough left over that he insisted I eat one too.  I couldn’t let it go to waste!  😉

I was pleasantly surprised at how much I liked it.  Usually I would really eat a combo like this but it satisfied me with a bit of comfort food before I turned in for bed.

I didn’t get to sleep until almost 11:30 last night!  Way too late for me.  I was surprised since I ran yesterday, laid out and biked to and from Community Group.  Usually on days like that, I crash out but I guess the sun didn’t drain me like I thought it would have!

I had a feeling I’d be put on call from work this morning but no such luck.  I headed in and worked until 11:30 and the second I hit overtime, I was sent home on call.

Oh yeah, I did eat some Honey Nut Cheerios at work for breakfast.

So I headed home and had an agenda since the hubs was at home all day.  We needed to go to our storage unit and swap my winter clothes for summer clothes, eat lunch and hit up the grocery.  Oh, and can I just say how hard my bike ride was on the way home because of 25 mph winds?  Brutal!!

We decided lunch was a must before everything else.  Food first always!

We decided North End Cafe sounded good and was lucky enough to get a spot on the patio.

We decided to split food today.  I thought their natural grass fed beef burger on a whole wheat bun sounded perfect to split.  It was half a pound!  Huge!!  There is no way I could’ve eaten it all myself.  Served with a side of fries and a pickle of course.

We also ordered the hummus tapas.  Complete with carrot sticks, snap peas, pita bread and olives.  And hummus of course.

I was completely satisfied with our meal.  Too bad we couldn’t sit out there and enjoy the sun more because as soon as we had finished, work called to call me back in.  Just a mere two hours after letting me go home.  Errrr…. I’m getting quite frustrated with this whole on call, send Lauren home from work and then call her back in thing.  I will not put my work life above my personal life.  I will go on with my life and if they call me in, then I’ll get there when I can get there.  I can’t live my life waiting by the phone doing nothing when I’m on call.  Am I valid on this?

So it was back to work for another 5 hours and since the hubs had to drop me off at work after lunch, he had to pick me up from work when I got off.  We decided to go straight to our storage unit after I got off work and grab my summer clothes and get it over with.  And we also picked up our food processor that was packed away too!  Can’t wait to start using it soon!!

I had a Carman’s  muesli bar for a snack to hold me over until dinner since we’d be eating a lot later than usual!

We decided to pick up a rotisserie chicken from Fresh Market and some asparagus for dinner.  I also snagged some bananas, Fresh Market’s strawberry jam, whole grain crackers, hummus and whole grain waffles.  I know it sounds weird, but I’m going to buy the rest of our groceries tomorrow.  We didn’t need a lot from Fresh Market so I’ll get the rest of the everyday items from Kroger tomorrow.  And we were hungry so we wanted to hurry!!

We finally got home, heated up the chicken in the oven for a few minutes, sauteed some asparagus and were good to go!

Hummus and a few crackers on the plate as well.  Now looking back, I’ve had my share of hummus today!

I ended up not eating all my piece of chicken because it was quite large so we saved the rest of my chicken and the big chicken for leftovers.

This time we’re doing white cake and white icing made into balls and dipped into melted white chocolate and melted regular chocolate.  We shall see how they turn out.  We’ll finish them tomorrow since it’s so late tonight but I was happy to have been able to lick the remnants of raw cake mix of a spatula.  It’s my favorite part!  🙂

Hope you’ve had a great Friday!  I have all weekend off and that means I can stay up late, sleep in tomorrow, lounge, lay out…. heck!  Just do whatever I want!  I haven’t had a weekend like that in a LOOOOONG time!  You shall be seeing lots of posts from me.  Stay tuned…
