    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Success!!!

First let me say thank you to all the people who wrote encouraging comments on my last post. It means a lot knowing there are people out there that never cease to encourage and love.

I was thankful to wake up to sunshine thus morning and begin a new day. I was awake at 7:30 and thought about going on a run but it was pretty gusty with the wind this morning so maybe after my 4 hour shift this afternoon I’ll hit the pavement.

I had a prosthodontics appointment this morning so I didn’t breakfast until after I had my teeth looked at. I was really excited because I had a free coupon from my 5k race to try the yogurt parfait from Chick-fil-a. You could either get granola topping or Oreo. I, obviously, needed to get the granola. I have not found a yogurt I have yet to like. And it bums me out because I want to love yogurt because it’s great and healthy.

I was so excited that I loved it so much!! Yay, a yogurt that I found that I like and enjoy! Maybe I’ll start buying a single serving of yogurt at the store and trying them one by one until I find one I like so I can have them at home. At least now I’ll have a good, healthy fast food breakfast option when we are traveling.

That’s it on my end for now. I head into work this afternoon for a quick 4 hour shift so I’ll see you all later! Hope you’re having a happy Friday and the sun is shining where you are!

Fitting It In

Good afternoon friends! I decided to iPhone my post today since I haven’t had a middle of the day posting lately! So here you go!

I got in some good leg and ab strength training last night. I was feeling the burn for sure! I feel like that’s always a good sign for a strong workout. I could definitely feel my heart rate go up during my many lunges, that’s for sure.

I was excited to be ready for sleep by 10:15 last night! Getting closer to my 10 p.m. goal! And I slept super hard last night which is always nice.

I walked out this morning to be pleasantly surprised with 60 degree temperatures! I’m thinking I need to get my bike tuned up ASAP so I can start biking to and from work again. Can’t wait to get my blood pumping with a little biking in the mornings again!

I couldn’t wait for breakfast this morning because it’s my favorite cereal combo. Kashi H2H and Special K Granola! Love love love it. And it usually keeps me totally satisfied until lunch time. That’s a huge plus!

I was going to have pizza leftover from last night for lunch but a medical rep brought us Jimmy John’s so I’ll save pizza for tomorrow.

One veggie and one ham.

A bag of their BBQ chips. Only 130 calories. Not bad at all.

All together. I’m all about a free great lunch!!

I’m off and running to finish up the rest of my 12 hour shift. It’s another fruit dinner since community group is tonight. See you later!!

Unexpected Day of Work

I honestly didn’t expect to go to work today.  I figured that I’d be placed on call because that has seemed to be the Friday trend lately.  So I went to bed without a shower last night expecting to be able to sleep in a little later than usual and then shower and piddle around the house.  Nope.  So that means I had to drag my rear out of bed that much earlier to get all cleaned up and ready for work.  I usually take my showers at night so I have more time to sleep but every once in a while it is nice to start off my work day with a hot shower to get me going.

I quickly threw together my breakfast since I hadn’t prepared the night before.  (I didn’t get to bed until after 11… eek!!)

Then they were going to send me home at 11 due to the calmness and low census of patients and then the floodgates broke loose so I ended up working all day.

Good thing I had my tasty lunch that I had packed to eat yesterday that I didn’t get to eat due to food being catered in.

Whole wheat tortilla stuffed with flank steak, topped with homemade salsa, shredded cheese and spring mix.  So good!

A couple tablespoons of homemade salsa with some chips?  Yes, definitely.

The salsa is pretty spicy so I ate 4 saltines afterwards to keep my mouth from burning off.  Worked like a charm.  And my tummy was completely satisfied.

Right after work I drove to a church that the hubs was leading Disciple Now for a youth group and ate dinner with him and enjoyed watching the youth worship.

Pizza was served.

Not my first choice of dinner since I feel like I’ve had so much Italian food type items this past week but it’s a good carbo loading meal nonetheless for my 10k tomorrow morning.  And it’s free.  Can’t beat that!

Well, I have my 10k in the morning and will not be getting as much shut eye as I’d like but I’ll sacrifice to support the hubs in his endeavors too!

Thank goodness one of my friends picked up my race packet for me today so I don’t have to be up at the butt crack of dawn to go get it and then wait around for the start of the race.

I’ve got the anxious/nervous/excited jitters but in a good way.  I’m excited for this race!  I just hope I’ll make good time and push myself.  I’ve got everything ready!

Shoes: Check, Sports Bra: Check, Garmin: Check, iPod: Check, Camera: Check, Runing Tee: Check, Socks: Check, Headband: Check, Pants: Check.

I’ll pin my number on tomorrow morning when Glenna brings me my race packet.

Whew. I  think that’s it!

I’m setting my alarm to wake up at 5 a.m. so I can eat me a breakfast and go back to bed until about 6:30 so it will digest.  I’m thinking whole wheat toast with a spread of peanut butter and sliced banana will be sufficient for fuel.

I’m really hoping that my funky mood will go away after my race tomorrow morning.  I’m thinking that running is my natural Xanax.  Those endorphins are good for me and since I haven’t ran since Tuesday, I’m feeling the major itch to get those flowing again!!  So adrenaline+other runner’s energy+completing a race= a great sounding endorphin boost!  Can’t wait!  Hopefully there will be sunshine!!!

I’m off to try and get as much rest as I can!  Wish me luck!  I’ll write as soon as I can after the race!

Movie Night

Today turned out to be completely different than I expected. Well, first of all, I ended up being ready for sleep at 10:15 last night so I’m getting closer to my 10 p.m. goal. Slowly but surely.

I really did feel more rested today, even with just a few minutes of extra sleep.

I got pulled to a completely different unit at work today and it was actually a nice change of pace.

I ended up eating a banana for breakfast instead of my usual cereal. A nice change of routine.

Lunch couldn’t have come quick enough. I was so hungry by 11 a.m.! But I was able to hold off until noon because one of our anesthesiologist had lunch delivered from a Medittaranian restaurant, Shiraz, in town. Ridiculously insane good.

My pita had a spread of hummus, chipotle sauce, loaded with roasted tomatoes, onion, zucchini, squash and two small pieces of chicken.

I also had a piece of mahi on a bed of lettuce and veggie salad that consisted of onion, cucumber, tomatoes and herbs.

All together.

I went back for unpictured seconds of the veggie salad and a couple slices of the roasted tomatoes topped with a little hummus and chipotle sauce.

That surely filled me up for the rest of the day so I didn’t eat again until “dinner”.

One of our friends received several free sneak peek movie tickets to see “The Bounty Hunter” featuring Gerard Butler and Jennifer Anniston.

I ate my “dinner” at the movie theater.

The hubs brought me a sliced apple, banana and grapes.

I ate it with 1.5 tbsps. of peanut butter.

And halfway through the movie I ate my trail mix I brought along. Dry roasted almonds, craisins and dark chocolate covered pieces of plum.

The movie was cute.  A definite renter for sure!  I don’t know if I’d  spend >$20 to see it in the theaters but I would definitely rent to watch at home.  I just love both of them!!

Well I’m finally home and it’s definitely past my bedtime of 10 p.m. but hopefully I’ll fall asleep in no time. My mood has been off kilter lately so I’m trying to figure out why. Hrmph. I don’t like feeling this way. Maybe tomorrow I’ll feel back to my normal self.

Guac, Salsa, and Fajitas

What a day it has been.  As soon as I stepped onto the floor at work this morning I was told by the night shift manager “You might as well go ahead and put your roller skates on”. And boy was she right.  Today was different from yesterday in that it was an organized chaos.  We were completely full, busy and had patients waiting for rooms but we had enough staff today to be able to help each other out and pay proper attention to our patients.

I was glad to get breakfast in my belly this morning.  Puffed wheat cereal with a sliced banana.

Lunch was a little late for my usual routine today.  I ate after 1 pm and was pretty hungry.  I was glad to have leftover whole wheat tortellini (cheese filled) with marinara.

All together.  Don’t you love my fancy tupperware?  I wish I could eat on my real plates everyday!  ;-(

Later on for a snack I had a pear.

And maybe I had a handful of Chex Mix too.  I’ve felt super snacky today and I feel like it’s from my weekend of eating mostly carbs.  I’ve got to get back on track because my body is feeling, shall we say, bloated?!  All that bread is making me expand!!

Anyway… I hit the ground running after work and did 3 hard, fast miles.  (Well, fast for me)  I enjoyed the 57 degree weather and it being light outside!!!  Here’s my stats:

Mile 1: 9:53

Mile 2: 9:11

Mile 3: 8:08

Total: 27:12 minutes

YEE HAW!!!

I was famished by the time I got finished with the run and was so excited for flank steak fajitas that were waiting on me!

First up: My whole wheat fajita packed with flank steak, spring mix, homemade salsa, sour cream, cheese and grilled onion.

Homemade guacamole?  Sure.  Note: Another shocker so prepare yourself.  This is only the second time I’ve ever had guacamole.  The first time was just a few weeks ago and I love it!!

Homemade salsa? Absolutely!

All rolled up with some tortilla chips on the side.  Obvi.

So so good!  I wanted another wrap but I decided to wait and see how I felt after a little while and of course, I was full.  But I did seem to have just enough room left in the tummy for some fruit.  One mandarin and red grapes while I am blogging.  I LOVE fruit!!!

Ok, so this night will be the beginning of trying to get back to bed and be asleep by 10 pm!  I’ve got to get moving so I can make it!!  I hope you all had a great Tuesday.  It sure felt like Monday to me… weird!

No Lunch Day

Before I get to why I titled this post “No Lunch Day” I’ll tell you about my morning.  My morning started off by me crawling out of bed.  My body was so not ready to get up at 5:30 a.m.!  This time change has messed me up!!  But I got going shortly after being awake and headed into work.  I was hungry as soon as I woke up but I ended up holding off eating breakfast until 9 a.m.  I think I’m going to try and start waking up around 5 a.m. on the days I work and making a green monster and spending time with the hubs and starting my day off right.  We’ll see if that ever happens.  😉

I had my favorite new combo of cereal: Kashi H2H Honey Toasted and Special K Granola.  A match made in heaven.

Before I knew it things were kicked into high gear on our floor and with my patients so I didn’t stop to eat lunch until 1 p.m.  Thank goodness our manager had ordered us lunch, otherwise I wouldn’t have been able to eat at all.  Since we were unable to actually take an official lunch “break”, we called it a ‘No Lunch Day’, hence the reason for the title.

I didn’t get any pictures of lunch because we were that busy and I thought cramming food down my throat was a little more important at the moment.  Eat while you can when you’re a nurse.

Our manager ordered us Jimmy John’s platters.  I had 3 small pieces of subs.  One veggie, one tuna and one ham.  I still can’t decide which one I liked best.  I think they’d be ten times tastier if they had whole wheat sub bread available for the platters.

After an hour, I was still hungry so I had another small piece of the ham.

No snack for me today because those 4 small pieces held me over until I got home.

I got home and decided that sent I didn’t get home until almost 8 that I would need to do some strength training tonight instead of running.  I shall run tomorrow night, for sure.

I did a number of different style push-ups (standard, military, diamond, decline and wide legged), pull-ups (wide grip, close grip over handed and close grip under handed), a variety of other back exercises with weights and ab exercises.  I worked it hard and feel great!!  After that hard workout, I deserved dinner!!

On the menu: Grilled chicken, asparagus and a sweet potato.

I tell no lie: This is only the second time in my life that I’ve had a sweet potato. I think I’d prefer a regular potato in the end but I think it’s a good change and healthier too.  Maybe we’ll try sweet potato fries next!!

I ate half of the chicken and asparagus and my whole sweet potato (since it was a smaller tater) and packed all that up, plus half of another sweet potato for a future lunch at work this week!  I love leftovers!!

That’s about it on my end.  I’m needing to wind down for bed and get rested to hit the craziness of the baby factory again tomorrow!!    I might see some fruit in my future before I hit the hay.  But what’s new?!  Hope you all had a great day back into the week!

One Hour Later

Well hello all!  Welcome to Daylight Savings Time!  I am so excited about it staying lighter at night time!  Spring, summer and fall the hubs and I take major advantage of the increased daytime and love to go on evening walks all around Old Louisville.  It’s our thing and I’m ecstatic about it getting warmer and lighter so we can start our routine up again.

I only slept until 9:30 despite the time change so really that’s 8:30 according to my body.  The hubs is now home which I’m ever so grateful that he’s back safe and sound.  He even rented the movie “Precious” for me to watch last night when he got home.  We ended up finishing it this morning because we were so dog tired last night.  It was a good movie but extremely sad and heart breaking.  But a must see for sure.

I decided after we finished up the rest of the movie that I needed some food in my belly.  Someone say waffles with fruit?  Yes, please.

We’re headed to a friends house for a birthday celebration for her husband in just a couple of hours where there will be pizza.  I hate that I’m going to be eating pizza again but I’m going to try and keep it light with just a couple of pieces.

It doesn’t look like I’m going to be able to finish up those remaining 4.5 miles today since it’s rainy and yucky outside.  But my body is extremely stiff and sore from yesterday’s run so it’s probably best.  Hopefully Monday night will be clear enough to hit the pavement.

Well, I’m off to get ready to head to the party in a little bit.  Hope you all are having a great first day of Daylight Savings Time!  See you this afternoon!
