    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Party Number 1- Done

We’re back from Patrick’s graduation party and we had fun hanging out, enjoying our rooftop deck and eating some good food.

We love our rooftop deck for parties but I love it especially for laying out and getting some sun.  They had some cornhole set up for gaming later.

And I got to show off my now normal looking toes!!!  So excited that my toes are completely back to normal as of last night!  Summer, flip-flop weather ready!

We had a photo shoot on the rooftop before the party began.

Much better!  Now onto the par-tay!!!

I had a couple of bites of potato salad, baked beans, taco dip, a few chips and a hot dog.  Not too filling but just right.

Just right, especially after a few bites of decadent dessert.

A chocolate chip cheesecake ball which I didn’t finish all of and two bites of each cupcake (chocolate fudge and lemon).

I’m learning to share my food more and more so I don’t find myself overindulging.  Works like a charm.  Such a simple concept but being raised in the South, I was taught to clean my plate and it’s hard to get out of that mentality most of the time.

When we went inside to say goodbye, they had the fondue rolling so I dipped one strawberry, one piece of pineapple and one bite of banana in the melted chocolate.  With a couple of plain pieces of pineapple too.

The hubs, me, Jack, and the college graduate, Patrick.

The sweet dog, Marie.  They had to adorn her with a barrette with the University of Louisville’s colors for where Patrick graduated from.  I love little Miss Marie.

And she loves me, obviously.

We couldn’t stay long because we’re off and running to a wedding after a quick wardrobe change.  I have loved today already and I know it’s only to get better with witnessing another man and woman entering into the blessing of marriage.  It only gets better by the day, people, better by the day.  Can’t wait to go throw on my party dress and have a blast tonight with my groom!!  See you later gators.


Celebrating the Derby at Work

Working on Derby Day is sort of fun because we eat, try and watch the festivities on the TV and definitely try to watch the running of the horses. It’s all abuzz around here with talks of the celebs, horses, events, hats, etc. and it’s so fun!

One of our nurses brought in a grill to grill up some burgers! I’m all about it!

I started out with two helpings of salad topped with  carrots, radishes, tomatoes and cucumbers.  With a drizzle of buttermilk homemade ranch dressing.  I loved getting some veggies in my belly before the heavy stuff!

I split a burger with someone else and topped mine with mustard, ketchup, relish, tomato and lettuce.  I’m so glad I split because that was plenty!!  With some Lay’s sour cream ‘n’ onion chips, sweet slaw and baked beans.

I’m definitely satisfied.  Talks of me being sent home are flying around here so I might get to make some Derby parties after all!  We’ll see what crops up!

Happy Easter!

Happy Easter friends!  Hope you all have had a fantastic day.  I had to work today in order to be off one of this upcoming weekend days so I can go on a little road trip.  Details to come soon about the road trip but there is a surprise in store so I gotta keep it a little quiet for now.  🙂

Work wasn’t so bad.  It was actually nice and pretty laid back for most of the day which is what normal Sunday’s usually look like for us in Labor and Delivery.

They had a potluck at work today and I had no clue about it!  Oops!  No one called to tell me so I didn’t bring anything but it’s not my normal weekend so I got lost in the mix.

Before we get to the yumminess of the potluck, I had breakfast and couldn’t wait!  I tried out the Kashi Autumn Harvest cereal I bought on sale at the store yesterday and liked it better than the normal Cinnamon Harvest I buy.

I topped it with slices of banana.  A perfectly filling breakfast.

Lunch time was before I knew it and I dug right in.  I filled my plate up with two kinds of barbecue (chicken and pork), baked beans, coleslaw, macaroni salad and fruit salad.

I chowed down and ended up getting a couple more spoonfuls of barbecue, macaroni salad and beans.

Within 5 minutes, I realized I ate too much, too fast. I  haven’t felt that full in a long time.  It wasn’t a satisfied full feeling it was an overly stuffed, bloated, pooched stomach feeling. Whoa.  I’m usually pretty good about pacing myself and not letting my hunger greediness get the best of me but not this time!

I can’t beat myself up over it though because (a) I ran over 10 miles yesterday and walked over 3 miles (b) somedays we slip up and over indulge (c) there is always tomorrow (d) it’s no fun to get caught in the guilty trap.

I ended up not snacking at all the rest of the day because of my fullness and I knew I’d be eating a pretty dense meal for dinner tonight.

I hated that I wasn’t able to attend church today but we had a dinner planned with friends after work from church so we took over a roast. I love eating roast, especially my mom’s roast. I can cook a roast exactly, step by step, how my mom does, but it never turns out as tender or mouth-watering as hers!  How does she do it?  She’s an amazing woman, I tell ya!  It’s probably all the love she puts in it.  🙂

Oh, and I got a phone call from my dad today, surprsingly.  Considering it’s been almost 6 weeks since he had any sort of contact with me, I guess he thought it was due because it’s Easter.  Maybe he’s not cutting off contact with me for good after all.  I’m just going to keep praying and putting this not so great situation in the Lord’s hands and let Him guide me because Lord knows that I have no strength or power within myself to change the situation.  I just want to love my dad with Christ’s love the best I can and if he wants to have contact with me then great, I’m all for it. He’s my dad and nothing changes that.  I might not agree with all of his choices he’s made in his life, especially in regards to my family and my mom but I just know that the best I can do is pray and love him through it to point him towards Christ and His love for us.  So there’s an update on that little tidbit of this personal life of mine.  Please continue to pray for me and my family as the rollercoaster of emotions continues.

Alright, onto our dinner!!

Our roast was cooked with red potatoes, carrots and onion.  We mix a can of cream of mushroom with a packet of Lipton dry onion soup mix and a soup can full of water and pour over the roast to marinate.  We cook it at 300 degrees for an hour a pound so it’s nice and tender and juicy.  This roast was a little over 3 pounds so we cooked it for a little over 3 hours.  (I LOVE the way it makes my house smell.  Reminds me of my childhood.)

The Lewis’ always have amazing bread whenever we get together so I don’t mind digging in at all.

Dessert was a chocolate trifle!  It was divine!  Lindsey is so cute and creative and I ate this up: figuratively and literally.  I’m totally doing this for a get together one day!

Lindsey and I got to talking about food and it was all she wrote.  We could’ve talked about food and grocery shopping all night!  I love having friends that I can get excited with about things like food.  A lot of people think I’m crazy that I love food and talking about it so much.  It’s nice to be in good company.  🙂

Now we’re back home with a belly full of comfort food and ready for bed.  I have a feeling I’m going to sleep well tonight!  I’m blessed the Savior died for me and rose on this day to reign in heaven.  I couldn’t ask for more in my life so I am content.  I pray all of you had a great Easter!

Monday Already?

I got 8 glorious hours of sleep last night! I was fast asleep by 10 p.m. and it felt great! The only disruption during that time was, of course, a trip to the bathroom (dang water!) and hearing our rowdy neighbors vacuuming at 3 o’clock in the morning.

It was back to work this morning after having a relaxing day yesterday. Is it really Monday already?  How do the weekends go by so quickly?!

I couldn’t wait to eat my breakfast this morning because I woke up feeling ravenous!

I know it’s the end of the month when we’re slowly running out of meal options. I have one more bowl’s worth after this morning of Kashi H2H Honey Toasted and Special K granola. Boo.

I was c-section girl today and was in the operating room during lunch hour and was starving. Is it so weird that I can be hungry while watching a surgery? Another “you know you’re a nurse when” moments.

I couldn’t wait to eat my leftovers from last night’s dinner for lunch today. So good!

Disclaimer from this point out: My lunches usually aren’t aesthetically pleasing because I’m a nurse and usually I don’t truly get a 30 minute lunch break.  So my food looks like a reheated mess but it works, it’s yummy and fast!!

I had a hankering for a mandarin after I ate so I had one. Gotta give my body what it needs and wants!!

I packed a couple of snack options for today. I didn’t know if I wanted the trail mix I brought, apple with peanut butter or both! I knew I had a run planned for tonight so I needed some fuel to get me through my run and not be too famished before dinner.

I chose….

An apple and some peanut butter of course!  It just sounded more appealing to me at the moment.

And look what a co-worker brought me today!  Isn’t that so sweet?  I can’t wait to continue with my new obsession with Laughing Cow wedges.  They are for sure on my list for the next big grocery trip!!

I left work and was contemplating my run that I had planned in my head.  I feel really great after my 21 miles on Saturday but there is just a little tiny kink in my right hip that I feel so I figured since I’d made it this far with no injuries, I wouldn’t start now.  So I’m running tomorrow night!  I was productive when I got home though.  I did many sets of pull-ups, push-ups and ab exercises!

Dinner was pretty simple tonight.  We’re running really low on options for meals all around so we decided that it’d be a breakfast for dinner sort of night.  Nothing too fancy at all!  I had one scrambled egg, a Morningstar “sausage” pattie and a Pillsbury biscuit with strawberry jam spread.  I wish we had some wheat bread but I’ll settle for Pillsbury.  They aren’t too shabby tasting.  🙂

Oh man, I feel like my dinner looks super lame too but tomorrow night will be more appealing… I promise!

I’m off to finish making my tuna salad for lunch tomorrow and get settled into bed for the night!  Hope you all had a great Monday!!

Catching Up on Calories

Look at what was sleeping on me all day?!  How lucky am I?

Those cute things have been sleeping ALL DAY!!  Lazy boys!

The rest of my day was spent vegging and doing nothing!  It was great!  Around 3 o’clock, I was starting to feel quite hungry so I snacked on some trail mix of mine.

Dry Roasted Almonds, Craisins and Dark Chocolate Covered Plums.

It held me over pretty well until after we went to church and came home to cook dinner.

The hubs and I hopped to it with fixing dinner because we were both starving!  I think my body is so ravenous since I ran 21 miles yesterday so I’m trying to catch up on the calories.

On the menu for tonight: Flank steak, Asian inspired sautéed green beans with mushrooms, onion and bell pepper, Annie’s mac and cheese and baked beans.

The hubs had a Sister Schubert’s roll with his dinner but I decided to skip out since there were a tons of carbs on my plate already.

I packed up half the flank steak, sautéed veggies and rest of the baked beans and mac and cheese for lunch tomorrow.

This was our first time to try out Annie’s mac and cheese.  Usually I’m a Velvetta shells and cheese girl but even their small boxes are so big for the two of us and the serving sizes I scoop for myself ends up being huge!  So I decided to try this!

My review:

I really, really enjoyed it!  The shells, themselves, are smaller than Velvetta and the cheese mixture stayed creamy the whole time.  With Velvetta, they usually clump up and dry out pretty quickly but these were perfect.

A mandarin for an after dinner snack because I just felt like I needed something else.  Maybe I should have eaten a roll after all.  🙂

I’m now settled onto the couch and plan on being in bed and ready for sleep by 10 p.m.  I don’t think that’ll be hard tonight since my breakfast, lunch and snack are already packed up and ready to go for work tomorrow and I’ve showered and caught up on everything.  Here’s to hoping our next door neighbors won’t be partiers tonight and I can sleep all night!
