    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

    I'm always learning and discovering new foods, recipes, workouts and ways to live a healthy lifestyle. Join me on my journey towards becoming my healthiest self.

Leisurely Saturday

I have had the most leisurely Saturday morning and have enjoyed every second.  I slept in until 8 this morning and ended up falling back asleep until 10!  How crazy is that?!  My body was screaming for rest.

I woke up and enjoyed watching some shows on our DVR and decided after an hour or so that it was time to put some food in my belly.  So I did.  I had the other half of my wheat bagel from yesterday.  Scooped the bread out of the middle.  My new addiction to save tons of calories without sacrificing any taste at all!

I don’t even miss the extra bread!

I loved my breakfast even thought it was so simple.

Before I knew it, it was time to start getting ready for the graduation party for a friend we’re headed to… right next door to our loft.  They are our next door neighbors and we’ve become great friends with them.  Love that I can walk two steps and be there!  I’m all ready to go.  I curled my hair which I haven’t done in AGES!!  I think it’s fun for today.

Munday Funday

Happy Monday!  It’s back to work which is always a rude awakening after a nice few days off of work.

Nothing that a good bike ride into work won’t get me back into the game.

Breakfast was easy and simple.  A fabulous Apricot muesli bar from Carman’s that I received in the mail a couple of weeks ago and a banana.

I’m such an easy breakfast person I think.  Maybe when I’m a stay at home wife or mom, I’ll dive into fixing more elaborate meals for breakfast.  But for now, it’s so much better to grab and go.  Ah, the life of a nurse.  The day starts early and ends late.

You know what I love?  That I can out a bunch of bananas from the store in our fridge and they stay perfect for weeks!!  I’ll never set them on the counter again.  They go bad way too quickly that way.

Ok, I’m off to finish the rest of the 10 hours left in my day.  Doesn’t that sound super long?  It does to me.  Let’s hope it goes by quickly!

Early Morning Run

After I blogged last night, I received a phone call from one of my closest friends in Louisville asking if I wanted to go for a run this morning.  I jumped on the idea because since we went running together two days before the marathon, I was hooked with having someone to run with.

I love that Mandy runs in the morning because it starts my day off perfectly and frees me up for the rest of the day to do whatever I want or need to do.  We pounded out 2.7 miles in just under 27 minutes.  After drinking some water and stretching (chit chatting the whole time of course) we headed to the grocery to pick up some things we needed.

After a quick grocery trip, it was back home and time to eat some breakfast.  I was hungry!

I thought about trying my hand at oatmeal again this morning but changed my mind because I didn’t want to put so much effort into it and it not be that good because I needed instant gratification.  So I made waffles instead!

Topped with half a nanner and some fresh strawberries with a drizzle of honey.

I had thought about going on a picnic down by the river today but a cold front moved in last night and it’s a cool 50 degrees here.  Besides, there is some cleaning to do around here and I have to get ready for a fabulous dinner we are having with friends tonight over at Mandy’s house.  I’m really excited for the spread that we are going to have.  Can’t wait to take lots of fun pictures!  I’ll see you all later!

Crazy for Food

I love food. We know this about me. Clearly. But I also love Lenny’s Sub Shop. Lenny’s originated in Memphis, TN, where I grew up, and was my first job when I was 15. They hired me right out of the line because I was such a frequent customer and always had a smile on my face. At the age of 17, I was promoted to marketer of several Lenny’s stores and had the time of my life. It was, hands down, the best job I’ve ever had. The company is amazing, treats its employees with respect and treats its customers even better. Their food is fresh and sliced right in front of you. No processed food here!

Today is their grand opening of the first ever Louisville location and I was psyched! Even better, I found out they were having a promotion for the opening that said the first 50 people in line received free food for a year! You better believe the second I got put on call from work this morning that my rear hopped in the car to get in line.

I was thankful to find out that my friend, Maggie, and I were numbers 9 and 10! Score!

We’ve been here since 5:30 a.m. and it opens at 10:30 a.m. so only 1 1/2 hours to go! Totally worth it. See how happy we are that we’re about to get a year of free, delicious food?

I brought a variety for breakfast this morning. It was all easy grab and go.

I’m the happiest girl in the world right now. I’m just loving this. So exciting! And the news and radio crews are starting to appear. Who knows, I might get interviewed! 🙂

I’ll be blogging later to fill you in on the rest of the happenings later! Here’s to hoping I don’t get called into work before 10:30. That would stink! See y’all in a bit!

A Clean Start

It was raining like ridiculous this morning!  I was almost flooded into our loft!  Thank goodness the policeman outside our house let us through the barricade.  We have so much flooding that it’s unreal.  Hopefully it’ll calm down before I leave work so I can get back home!

I love starting out my day with clean eating.  I spent a good little bit last night slicing up fresh strawberries to stick in the freezer for thawing out at my convenience and decided fruit was in order for breakfast today!

You can’t go wrong with a mixture of grapes, banana and strawberries.  Cool, fresh and tasty.

I love being productive and thinking ahead.  I am all about convenience, especially when things don’t seem to be slowing down, but speeding up!  My life is crazy but I love it.  I will see you all at lunch!  Happy Sunday!

Derby Time!

It’s Derby time here in Louisville and we have some gorgeous weather today for the first set of races for Oaks Day! I love all the festive spirit in the air.

I decided since today was going to be a pretty warm one (85 degrees)! That is was a cereal sort of morning.

We’re off and running with a full day of errands on my only day off for the next week! First up: Teeth cleaning then it’s on to grocery shopping (my fave) and hopefully some laying out, catching some sun and a run later!

I woke up this morning and my toes are actually hurting worse then they have been! UGH! So I’m hoping I’ll be able to run later because you all know how much I’ve been looking forward to it!

Hope I’ll see some crazy Derby outfits while we’re out and about! See you later!

Fresh Cut Grass

Thank goodness the rest of the day went by quickly!  It actually ended up being a calm, smooth day at work for a change.  It’s been so busy lately that none of us have been able to keep up with each others personal lives so it was nice to be able to catch up and laugh with some co-workers towards the end of the shift.  A nice end to my day I would say.

I have found some amazing friends within my co-workers and I am just so grateful for all of their support through my marathon training.  I mean, the second I finished the marathon, I looked at my phone and saw that my co-workers at work had called just to check in on me and see how I did!  So sweet and over whelming at the same time.  It’s great to know you have co-workers that you can call true friends, especially when you’re family is in another state and you know you can turn to them if you need them.  Amen?

Alright, off my little tangent.  I had an unpictured banana with some peanut butter for a late afternoon snack.

I biked home with smells of fresh cut grass all throughout the air and it was glorious.  I love that smell because I know summer is right around the corner!

It was burger night at our place. I had to redeem myself after not being able to really enjoy or finish my burger from Five Guys after the marathon.  I ate half and put the rest away for lunch tomorrow.

I was bummed that we didn’t have any lettuce to add to our burgers but we’re making a grocery trip on Friday so I’ll get all stocked up on groceries again.

I think spring is finally rolling in with some warmer weather and I’m itching to get outside and start taking nightly walks with the hubs.  I miss our walks.  Soon, hopefully soon.
