    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

All Day Affair

Call us crazy (or just me) but grocery shopping is usually an all day affair for us. I probably am the one that makes it such a long ordeal but I just love grocery shopping. I love taking my time, scanning the deals, looking at ingredients, etc. I just do not like to be rushed. So after a happy report from the dentist we hit up our staple stores. Ok, the hubs got a glowing report but I have two fillings that need to be re-done! Boo.

I knew we’d be out during lunch so instead of spending unnecessary money on a whim because we are hungry, I packed up a lunch for us in advance.

We’ve already conquered Sam’s Club and got a ton if stuff. Here’s the food we bought! Nothing processed. Lots of fruits and veggies. I love our new way of eating!

We’re off to Whole Foods and the Neighborhood Wal-Mart to pick up the rest of our groceries then it’s back home to lay out in this gorgeous weather we have today!

We have a fantastic dinner planned for tonight. Just the two of us. Can’t wait! See you after dinner!

Pure Honey

The Louisville, Bardstown Road, Farmer’s Market wasn’t as big as we had expected.

I think we got there so late they had sold out of a lot of things, unfortunately.  We did walk away with a bear of Pure Honey though. The hubs was happy.

We then headed to Kroger to pick up groceries to last us through the rest of the month. Thankfully we picked up everything we needed and hopefully won’t need to make another trip back until May!

We came home and I had a couple of crackers with red pepper hummus.

We started dipping the cake balls into the chocolate.  One half white chocolate coating and one half milk chocolate coating.

I had a bite of each one after I ate my lunch and I actually think I like the white cake mix and white icing combo better without the chocolate coating on the outside.  We have a few uncoated ones left so I think I’m going to claim those.

For lunch I ate a turkey frank on a whole wheat bun.

I bought these new kettle chips at the store today.  There bags are huge and they were having BOGO so I was all about it!  Especially since I can pronounce all of their ingredients.  Love the all natural ingredients in their chips.

I am debating when I’m going to go for a 7 mile run today.  I feel like there is a mild headache kind of lurking about deciding whether it’s going to stay or go.  So I think I’m going to relax for a couple of hours, let my food digest, catch up on Tivo and see how I feel.  If I don’t get my run in today (which I really want to!) then I’ll definitely go tomorrow.  Countdown begins! 7 days until I am running my first marathon!  I can’t believe it!  I must start mentally preparing…. NOW!

We are going over to a friends house tonight for dessert before we walk a couple of miles down to the Ohio River to watch the fireworks from the bridge for Thunder Over Louisville.  It should be fun.

Searching for Deals

Good morning!! What a beautiful Saturday it is here in Louisville. You know all that talk last night about me being able to stay up late since I have the weekend off? Ha! My eyelids couldn’t stay open past 11 last night. But I was able to sleep in like I wanted. Get this… Until 10 o’clock! That’s insane. I haven’t slept that late in months and months! I guess my body needed it.

The hubs woke me up to coerce me into getting out if bed to head to our local farmer’s market. I got ready quickly, grabbed a bottle of water, a granola bar and headed out the door.

I grabbed the last Kashi Crunch bar we had. Chocolate Caramel.

The hubs and I split it to hold us over until lunch. Before the splitage.

We’re almost to the farmer’s market and I’m excited to search for some deals!! After this we’re headed to the grocery to pick up some everyday items we need. See you all later! Hope it’s sunny where you are!

Wishy Washy

Last night after I left you all, the hubs ended up cooking himself a bacon, egg and cheese sandwich on whole wheat toast.  He had enough left over that he insisted I eat one too.  I couldn’t let it go to waste!  😉

I was pleasantly surprised at how much I liked it.  Usually I would really eat a combo like this but it satisfied me with a bit of comfort food before I turned in for bed.

I didn’t get to sleep until almost 11:30 last night!  Way too late for me.  I was surprised since I ran yesterday, laid out and biked to and from Community Group.  Usually on days like that, I crash out but I guess the sun didn’t drain me like I thought it would have!

I had a feeling I’d be put on call from work this morning but no such luck.  I headed in and worked until 11:30 and the second I hit overtime, I was sent home on call.

Oh yeah, I did eat some Honey Nut Cheerios at work for breakfast.

So I headed home and had an agenda since the hubs was at home all day.  We needed to go to our storage unit and swap my winter clothes for summer clothes, eat lunch and hit up the grocery.  Oh, and can I just say how hard my bike ride was on the way home because of 25 mph winds?  Brutal!!

We decided lunch was a must before everything else.  Food first always!

We decided North End Cafe sounded good and was lucky enough to get a spot on the patio.

We decided to split food today.  I thought their natural grass fed beef burger on a whole wheat bun sounded perfect to split.  It was half a pound!  Huge!!  There is no way I could’ve eaten it all myself.  Served with a side of fries and a pickle of course.

We also ordered the hummus tapas.  Complete with carrot sticks, snap peas, pita bread and olives.  And hummus of course.

I was completely satisfied with our meal.  Too bad we couldn’t sit out there and enjoy the sun more because as soon as we had finished, work called to call me back in.  Just a mere two hours after letting me go home.  Errrr…. I’m getting quite frustrated with this whole on call, send Lauren home from work and then call her back in thing.  I will not put my work life above my personal life.  I will go on with my life and if they call me in, then I’ll get there when I can get there.  I can’t live my life waiting by the phone doing nothing when I’m on call.  Am I valid on this?

So it was back to work for another 5 hours and since the hubs had to drop me off at work after lunch, he had to pick me up from work when I got off.  We decided to go straight to our storage unit after I got off work and grab my summer clothes and get it over with.  And we also picked up our food processor that was packed away too!  Can’t wait to start using it soon!!

I had a Carman’s  muesli bar for a snack to hold me over until dinner since we’d be eating a lot later than usual!

We decided to pick up a rotisserie chicken from Fresh Market and some asparagus for dinner.  I also snagged some bananas, Fresh Market’s strawberry jam, whole grain crackers, hummus and whole grain waffles.  I know it sounds weird, but I’m going to buy the rest of our groceries tomorrow.  We didn’t need a lot from Fresh Market so I’ll get the rest of the everyday items from Kroger tomorrow.  And we were hungry so we wanted to hurry!!

We finally got home, heated up the chicken in the oven for a few minutes, sauteed some asparagus and were good to go!

Hummus and a few crackers on the plate as well.  Now looking back, I’ve had my share of hummus today!

I ended up not eating all my piece of chicken because it was quite large so we saved the rest of my chicken and the big chicken for leftovers.

This time we’re doing white cake and white icing made into balls and dipped into melted white chocolate and melted regular chocolate.  We shall see how they turn out.  We’ll finish them tomorrow since it’s so late tonight but I was happy to have been able to lick the remnants of raw cake mix of a spatula.  It’s my favorite part!  🙂

Hope you’ve had a great Friday!  I have all weekend off and that means I can stay up late, sleep in tomorrow, lounge, lay out…. heck!  Just do whatever I want!  I haven’t had a weekend like that in a LOOOOONG time!  You shall be seeing lots of posts from me.  Stay tuned…

Papa John’s Ten Miler

Well, I’m finally able to sit down and post about my ten mile race this morning. It’s been a really long day already and I am ready to do nothing, sit on the couch and watch TV.

After I ate my pre-race breakfast that you saw earlier, I headed back to bed and slept on and off for another hour or so. The minute I got up to get ready, I was nervous. Nerves all around. My body was shaking, mentally I didn’t feel prepared, I was freaking out! Some friends popped in to walk to the start line so I prayed and talked with a friend and the hubs and they calmed me down.

I’m wearing the new armband the hubby Easter Bunny bought me and it worked out awesome!

I was thankful the rain was holding off because that would’ve been miserable for 10 miles in the rain!

I met up with a new friend from church, Lindsey, and we ran together. Her and her hubby is who we planned to go to brunch with after the race. Good thing we saw each other in the beginning so I’d have a running buddy.

We started running and I realized at mile 3 that I really hadn’t mentally prepared for this race AT ALL! We hit Iroquois Park where the 3 miles worth of hills began and I honestly did not want to push myself. So glad that I had Lindsey to run with because we pushed each other and conquered each and every one of those hills. As we left the Park around 6.5 miles I had a major right side splint and Lindsey kept encouraging me to push through. I kept running and before I knew it, it was gone. Praise the Lord! At the same time my side splint started, it began to rain. It wasn’t a light drizzle but it wasn’t a downfall either. Just a steady rain. The rain lightened up a little bit towards the end of the race but we were pretty soaked and looking like hot messes by the time we crossed the finish line.

My official time ended up being 1:41:55. The course was actually 10.18 miles so I averaged right around a 10 minute/mile pace. Not too bad considering the hills we had to run. Lindsey and I finished at the exact same time and we were so glad to go up and grab all the free food they had for us! I ended up getting several bananas, an apple, a Panera cinnamon bagel and 4 granola bars! Love it!! They had pizza for us too, duh! It was sponsored by Papa John’s! But I didn’t feel like that would be good post-run recovery food. So I just waited until we all went to lunch.

We walked back to the loft another mile and the heavens let loose and starting pouring on us so another half a mile run back to the loft and we were home to throw our clothes in the drier for a second and then head to brunch!

Brunch ended up being lunch because they were finished serving breakfast but I didn’t mind. I felt like eating a sandwich anyway.

I ordered the spicy tuna sandwich (no preservatives in their bread, SCORE!), topped with sliced hard boiled egg and arugula.

With a side of chips and wheatberry salad. The wheatberry salad is to die! It has wheatberry, celery, scallions, lima beans, and currants.

Can I just say how amazing this meal was?! Everything on their menu is healthy and good for you and I was pleased to find another place in Louisville like this. There aren’t too many around that I’ve found. I saved the right half of my sandwich for lunch at work tomorrow. Half of my chips and wheatberry salad got packed up to go too. I definitely couldn’t have eaten all of this. I’m never really that hungry after I race or have a long run so I’m glad I have such a great lunch for tomorrow!

There bakery makes bread fresh everyday and I hear it’s amazing. I can see how since the bread for my sandwich was delicious!

We then proceeded to our hair appointments we had scheduled for today. It had been over 5 months since I had my hair colored. Shocker that I’m not a natural blonde, right?! 🙂 I almost fell asleep in the chair because I realized how tired I was when I sat still for a moment.

Two hours of cuts and colors later, we were out the door and it was time for me to run to the grocery for a few essential items to last us until we get back from a road trip next weekend. I think we’re good to go for two more weeks which makes me excited!

I actually got some great deals in our organic section at Kroger, I was surprised. I picked up some Bear Naked Oats and Honey Granola with Blueberries (originally over $5 and I got it for $2.99), three containers of yogurt to test out, and Kashi cinnamon harvest and autumn harvest cereal for only $2.99 a piece! Not bad! Ususally they are over $4!! Then they were having a sale on Nature’s Own whole wheat bread Buy One, Get One Free! All about it! I pretty much got everything on sale or on Kroger special card prices. Love when that happens!

Now we’re home and relaxing. Not for long though, the hubs has a hankering for a Dairy Kastle hot dog and I think that sounds like a fabulous idea. Let me tell you about Dairy Kastle… they open in the spring during daylight savings time and close in the fall at daylight savings time and it’s a super cute walk up to the window dairy shack and they are awesome! I am addicted to this place in the spring, summer and fall! They have my favorite dessert there. It’s a Reese’s Cup flurry and it’s like a Dairy Queen blizzard with low fat frozen yogurt with Reese’s cups mixed in! To die for! So that’s another reason going there tonight sounded like such a fabulous idea! I plan on ordering one and devouring it. Another great thing, it’s close enough to walk so we get some exercise out of the deal. Can’t beat it!!

I’ll be sure and take plenty of pictures tonight. Thank goodness the sun came out and the weather has been beautiful since our earlier downfall! We’ll enjoy our walk thoroughly, I’m sure. I’ll enjoy having some hubs/wifey time just to talk and enjoy each other while we walk. Hope you all have had a great Saturday so far! See you all later!!

Skinny Jeans and Pasta

After I posted this morning we left for the surprise birthday party we were attending and ate pizza! Thank goodness they had salad as a filler too.

I topped my salad with the Italian dressing instead of the ranch that was staring me in the face. You know a southern girl loves her some ranch!!

After the party we went jean shopping!! I have lost close to 15 pounds since the first of the year between eating healthier and marathon training. My skinny jeans that I had bought just over a year ago were seriously hanging off of me and didn’t even look like skinny jeans anymore. So after procrastinating (because I hate getting in the shopping mood and I’m pretty cheap), the hubs said that we finally needed to go because I definitely needed new jeans and couldn’t put it off any longer. So off we went.

I was so excited to walk into the GAP and see they were having 30% jeans if you donated a pair of your old GAP jeans. Lucky for me I had worn my skinny not so skinny anymore jeans to the mall since I wanted to have a reference on what exact skinny style they were so I was determined to find some jeans I loved. Right off the bat, the first pair I tried on were perfect and I ended up donating my older ones to be recycled and getting 30% off the new ones. It was a win/win!!

Can we say love?!

Extremely glad that I have a pair of skinnies that actually look like skinny jeans again! Not only did I hit the jackpot with the jeans but I found 7 other super cute shirts and cardigans that I snatched those up too. I only shop about twice a year for clothes. Once each season and get some staple pieces and wear them all season with past clothes that I own. I’m in scrubs most of the time so it’s not like I need “work” clothes. I just need classic staple pieces for each season for when I go out and about. Love what I bought! And super glad that most of the pieces were on sale!!

After our super quick shopping trip we headed to church and then it was home for another Italian dinner. Today has been an all day Italian fare food day! First pizza and then whole wheat cheese tortellini for dinner!

Dinner was so yummy! I’m glad we didn’t have a huge batch of this because I totally would’ve kept eating it!

Fresh grated parmesan? Sure.

Italian style bread on the side to dip in the marinara? Of course.

With maybe a couple more pieces of bread. Hey! I love bread, what can I say?!

I have a little bit of the cheese tortellini leftovers for tomorrow’s lunch at work. No bread. Just pasta.

I had a mandarin for after dinner. I think I’m officially addicted to these.

And we thought it’d be a good idea to cut up the pineapple we bought on our grocery shopping trip last week and it ended up being rotten!!!

I was so upset! I was so looking forward to that goodness of sweetness!!

Instead to fill my disappointment, I ate a ramekin full of red grapes.

Alright, time to get ready for bed by showering and watching our Sunday night shows! I keep forgetting that my body is going to feel a little off with the time change so I’m hoping I’ll be asleep by 10 p.m. so I can be up and ready for work in the morning!
