    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

    I'm always learning and discovering new foods, recipes, workouts and ways to live a healthy lifestyle. Join me on my journey towards becoming my healthiest self.

In Love

Good evening bloggies and friends!  I can’t believe Friday is almost over and I have the next two full days off from work.  I plan on totally sleeping in tomorrow morning.  Which means, I’ll probably wake up at 7 instead of 5:30.  Hey, any extra sleep counts, right?

I had a great rest of the day at work and did enjoy my granola bar along with an apple and 3/4 tbsp. of peanut butter.  So good.

I biked home to a much anticipated dinner prepared by the hubs.  It was phenom!

I am already so in love with our decision to join a CSA.

The hubs grilled up some pac choi that was insane delish.

We had fresh lettuce mix straight from the farm topped with some feta, sliced radishes (from the farm) and a sriracha vinaigrette. Our salad mix included: A mix of buttercrunch, oakleaf, Bibb/Romaine cross, and Deer Tongue lettuces, accented with lacinato kale, tat soi, baby spinach, and some red mustard to add a little bit of heat

A small piece of ribeye for me. Those are two grilled scallions on the side and those were amazing!!!  Packed with flavor!

We had a bright idea of walking to our local McDonald’s to rent a movie from the Redbox and decided that a $1 sweet treat was in order.  Since we’re pretty tight on our budget for the month, we dipped into our change jar.

I was way tempted to order their new McFlurry flavor of Reese’s Cups they’ve recently debuted but have been pretty heavy on food and dessert recently so ordered a reduced fat vanilla ice cream cone instead.  Can’t beat it for 150 calories.

We saw this cute little bunny as we walked.  I just wanted to scoop it up!

We rented the movie Sherlock Holmes tonight.  It’s on right now and I haven’t really been paying too much attention.  Too much other stuff to do and on my mind.  Can’t wait for a couple of days to maybe decompress.  We have a busy day tomorrow with a graduation party and a wedding so who knows what sporadic times I’ll be posting.  Hope you had a happy Friday!

Nappers

I got sent home from work around 1 o’clock today and the hubs picked me up from work since it started raining and I had biked in.  We drove on over to chic-fil-a where I had coupons for free chicken sandwiches and a free order of fries from Penn Station Subs.  I’m all about it.  A whole lunch for free!!

I was really looking forward to having chic-fil-a’s classic chicken sandwich but on a wheat bun.  I got inside while the hubs was outside and ordered but the wheat bun was 15 cents extra and I hadn’t brought my wallet in and didn’t want to worry about running outside so I ended up just getting the white bun.  Bummer.  But it was still extremely tasty.

It’s been FOREVER since I’ve had their classic sandwich and I loved every bite.

We got home and I had expected to get call back into work but they never called so I took the opportunity to nap it up. I took about a two hour nap and woke up to eat a quick bite before community group and then we were off.  I really do think I could’ve slept through the whole night though.  I was tired!

I ate half of a Monterey veggie wrap from Calistoga which had hummus, feta cheese, caramelized onions, sliced tomatoes, sliced cucumbers, banana peppers, roasted red peppers and leaf lettuce, in a whole wheat wrap.

With these new chips I picked up at Whole Foods!

Not baked or fried!  And for 19 chips, it’s only 120 calories.  What a steal.  Super yummy too.

We headed to community group where I knew there would be dessert served.  These were like orange scones with an orange icing glaze.  I had one and two bites of another.  Delish!

I’m all ready for bed.  It’s already 10 so I won’t be asleep like I was last night but hopefully soon.  I’ll be watching Survivor’s episode from tonight on DVR and probably crash out.  Work in the a.m.!  Hope you all had a lovely Thursday!

Olé!

I’m so thankful the rest of the day passed by fairly quickly. I ended up not eating my yogurt and granola for a snack because it’s nurses week and we had a poster fair today, complete with pizza.

I resisted for a while but ended up seeing this teensy, tiny piece of pepperoni pizza calling my name so I rescued it.

Little did it know it was going straight into my belly.

Seriously though, it was a super tiny piece and I wish I had a picture but I didn’t think people would appreciate me whipping out my camera to take a picture so I just enjoyed it instead.

Anyway… look who met me at work.

Such a sweet act deserves a reward, right?

“What did you say hubs? Mexican food?Anything you want darling. Your wish is my command.”

Ha. Funny right?

It was actually both of us that were craving some serious Mexican food and we knew we both wouldn’t be able or want to talk sense into the other one about needing to cook at home so the obvious choice was to just go for our craving.

I was happy that we actually biked so we could burn some calories and that my little piece of pizza actually helped me not go overboard with binging on the chips and salsa.

We ordered our usual three tacos.  I had one soft chicken taco and the hubs had two hard tacos.

Love me some chips and salsa.  Key: Break chips into smaller pieces and load as much salsa as you can onto chip for fillers.

I had planned to go for a run tonight but my right big toenail is definitely jacked to the point where I can literally move it and see fluid floating under the nailbed. Not good. So I’ve reluctantly decided to rest from running this week and let my toe heal. I can’t keep pushing it like I have. I’ve been way too stubborn.

So I’ll continue to bike and strength train and hopefully I’ll be back to running by the weekend. Gotta listen to your body, right?

I came home to fix my meals for work tomorrow and eat a little more of my Easter bunny of solid milk chocolate.

The hubs had apparently had some today too!

I took the cleaver to it.  Poor bunny.

Ok, I don’t really feel sorry for it because I got to eat this yummy goodness.

I think I might do some ab exercises tonight before I hit the hay.  I’ve gotta run!  It’s already 9 o’clock and I need to shower, climb in bed and wind down so I can be fast asleep by 10 o’clock!

Did anyone else feel like it was Tuesday instead of Monday?!  I totally did!

A Year of Free Starts Today

My free year of receiving a sub sandwich from Lenny’s Sub Shop started today.  The hubs and I decided since I had the day off that we should go and grab a late lunch.

I ordered the #1  on whole wheat which is a ham, cheese and capicola with lettuce, onion, tomato, mayo, black olives, oregano, pepper, and banana peppers.

For all the years I worked with Lenny’s and have eaten there after moving on to nursing school and then nursing as a RN, I never ever tried their red hot pepper relish in which they are known for and now bottle up to sell.  Today was the day to try.  I LOVED it!  I added a little dab on each bite and it added an incredible amount of flavor and spice to the sandwich.

I had some barbecue baked Lenny’s chips on the side.

I really do like these better than Lay’s baked barbecue chips.  They’re a winner in my book for sure.

I packed up half my sandwich for lunch at work tomorrow so I am set with a fabulous lunch!  I love getting two meals out of one.  Don’t you?

Since it was so pretty outside today, we got my car washed while the hubs and I talked about some exciting upcoming possibilites in my life. 🙂

Lexi needed it badly!  She’s been dirty for a long time.

We came home to veg a little while before church tonight and I got a tad hungry a couple hours after eating lunch so I dug into this homemade granola bar that my friend, Lindsey, made and gave to me the other night when we babysat.  I know it has a variety of nuts in it and also some marshmallows.

The hubs and I split it down the middle.  Way to go Lindsey!!  I know you’re still perfecting your own concoction but I thought this was quite tasty!

We’re off to get ready for church tonight.  I think dinner is going to be pretty laid back tonight with some leftovers from our dinner last night but who knows. Maybe we’ll brew something else up in our heads.

I Took the Plunge…

…into the Green Monster world!

But let’s not get too ahead of ourselves, shall we?  I wouldn’t want to spoil the review of what I thought right out of the gates!  I have to fill you in on the rest of my exciting morning at Lenny’s Sub Shop.

First of all, I did not get called into work, thank goodness!  It was looking pretty iffy there for a while but I made it.   Maggie and I waited in line for a little while longer and they finally opened the doors and in we filed.

It was a fast moving process so I didn’t get any pictures until I sat down with my sandwich.

I ordered a #15 on whole wheat topped with onion, lettuce, tomato, oregano, pepper, a tad bit of mayo, banana peppers and black olives.

A PERFECT sandwich.  It tasted just as I remember!  I only ate half and packed the other half up for dinner tonight.  I also got a bag of their baked barbecue chips and ate half of those too.  I couldn’t believe it, but I got a drink that went with my meal and I actually got a coke!  I haven’t had a coke in months and months and it was good!  Not amazing enough for me to start drinking them on a daily basis but one every once in a while won’t kill me.  🙂

Unlike Subway, the pile their sandwiches full of FRESH SLICED (right in front of your eyes) deli meat and cheese.

All of their toppings are fresh and cut in the kitchen.  Believe me, I’ve had my hands in all of it since I used to work there for a few years.

I loved my marketing job with Lenny’s because I loved their food.  Lenny’s has an extremely special place in my heart and I feel blessed to have been a part of their team.  The even cooler thing?  I still feel like I’m a part of their team.  I ran into my first manager from Lenny’s today at this grand opening and he not only remembered me, but he talked to the corporate office as well today, and they remember me.  It’s nice to know I made a nice lasting impression.

I am pretty excited about getting a free regular sub sandwich or kaiser sandwich every week for a year but I’m even more excited that we have a Lenny’s here now!  It makes me so happy!

ANYWAY!  The hubs came and met me after I ate to grab a bite to eat too and we headed off to run some errands.  It was such a nice day out and I was excited to spend some time with him on an unexpected day off and get errands run today instead of on my three day weekend.  Ya hear?

On one of my errands I picked up a special treat!  Really proud that I was able to place this on my car.

Fitting to put it on while I was wearing my marathon shirt they gave me in my swag bag!  🙂

I came inside to make a snack.  I thought today would be the perfect day to make my first ever Green Monster!  I was really nervous but excited to try it out.  I added a frozen banana, two huge handfuls of spinach, some ice, a little milk and packet of chocolate amazing grass.

After several minutes of trial and error with figuring out why it wasn’t blending, the hubs figured out there wasn’t enough liquid to capture the spinach and blend properly.  So a little more milk and I was in business!!

Loved that I had the perfect amount for this glass.

You knew I was a Desperate Housewife, didn’t you?  Side note and cute story: My mom and two of her best friends (which are friends to me as well) took me on a grown up bachelorette party before I got married almost 4 years ago and my mom each had one of these wine glasses made for us with our names on the bottom.  How adorable.  It’s my favorite glass and I love that it will be perfect for my Green Monsters!!

I will forever be a believer in GM’s and will probably make them frequently.  I felt like I was eating a clean, hearty snack without having to search for carbs or peanut butter.  Not that there is anything wrong with peanut butter or carbs but I just need some veggies in my life!  And these are so dang easy to make, so I have no excuse!

I was glad I got a couple of single packets of the amazing grass to try because I didn’t know if I’d like it and didn’t want to spend a lot of money on the tub of it but believe me, this was a good investment and we will be buying a bin of it soon!  Along with some other mix ins like maca and chia seeds.  I have to take it slow because those things aren’t inexpensive and add up quick!

I’m off and running.  I think I’m going to go on a long bike ride after I eat the other half of my sandwich and chips and before I head to community group tonight.  Sounds like a plan to me.  Hopefully I’ll get some good mileage in!

Crazy for Food

I love food. We know this about me. Clearly. But I also love Lenny’s Sub Shop. Lenny’s originated in Memphis, TN, where I grew up, and was my first job when I was 15. They hired me right out of the line because I was such a frequent customer and always had a smile on my face. At the age of 17, I was promoted to marketer of several Lenny’s stores and had the time of my life. It was, hands down, the best job I’ve ever had. The company is amazing, treats its employees with respect and treats its customers even better. Their food is fresh and sliced right in front of you. No processed food here!

Today is their grand opening of the first ever Louisville location and I was psyched! Even better, I found out they were having a promotion for the opening that said the first 50 people in line received free food for a year! You better believe the second I got put on call from work this morning that my rear hopped in the car to get in line.

I was thankful to find out that my friend, Maggie, and I were numbers 9 and 10! Score!

We’ve been here since 5:30 a.m. and it opens at 10:30 a.m. so only 1 1/2 hours to go! Totally worth it. See how happy we are that we’re about to get a year of free, delicious food?

I brought a variety for breakfast this morning. It was all easy grab and go.

I’m the happiest girl in the world right now. I’m just loving this. So exciting! And the news and radio crews are starting to appear. Who knows, I might get interviewed! 🙂

Happy Belly

What a day. I am home, with a happy belly and ready for bed. But let me back up first.

I ended up eating my huge orange for an afternoon snack and saved my granola bar for another time.

Probably a good thing since I ate pretty heavy tonight. The fruit kept it light.

I left work in a hurry and biked to our community group potluck dinner. I couldn’t wait to eat some comfort food!

The roasted turkey thing didn’t work out so it was roasted chicken instead.

I got a bite or two of everything. More salad than anything to get my greens in!  Also a biscuit, mac and cheese, glazed carrots, roasted potatoes, roasted chicken, corn, green bean and mushroom casserole, and grape granola salad.

We brought the corn and roasted potatoes.

I was super pumped because we all headed to Dairy Kastle to grab dessert.  I biked and met everyone there.  I wanted to get a little more exercise in, especially since we had 75 degree weather today!

Reese’s Cup flurry? Yes, please! Don’t forget the extra scoop Reese’s!

I know, I know, I’m so bad. But it’s so good! 🙂

I downed the whole thing because that’s how I roll.

I’ll run it off tomorrow. Speaking of running, I’m pretty ecstatic to throw my Saucony’s on and hit the pavement tomorrow. It’s been a long 6 days off! Hopefully my toes will hold up okay.

We have a teeth cleaning in the morning and then it’s off to grocery shop! One of my favorite things in the world! Whole Foods here I come! I know you’ve missed me!
