    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

A Night of Tastes

I have a lot to catch you up on from last night.  It was 11:30 by the time we got home from our dinner with friends last night and I was too pooped to blog about it.  So here I am!  Well rested after a great 9 hours of sleep last night and already fueled up for the day from breakfast.

I made Spinach Stuffed Mushrooms for our dish last night.  I got the recipe from here.

Recipe:

Spinach Stuffed Mushrooms

Ingredients

2 tablespoons 365 Everyday Value Extra Virgin Olive Oil, divided
2 (8-oz) packages button or baby bella mushrooms, stems removed and finely chopped, caps left intact
1 small yellow onion, chopped
Salt and ground black pepper to taste
1 (1-pound) pkg frozen spinach, thawed and squeezed of excess water
6 ounces Feta cheese, crumbled

Method

Preheat oven to 350°F. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add mushroom stems, onions, salt and pepper and cook, stirring occasionally, until softened, 8 to 10 minutes. Transfer to a large bowl along with spinach, toss well; set aside to cool. Arrange mushroom caps in a single layer on a parchment paper-lined baking sheet. Add Feta, salt and pepper to spinach mixture then divide filling evenly between mushrooms, mounding it in the center of each. Drizzle mushrooms with remaining 1 tablespoon oil and bake until softened and juicy, about 20 minutes.

Using our new food chopper we bought the other day to chop the mushroom stems and onion.

Add the feta and stuff mixture into the mushroom tops.

Cook, then place on serving platter.  I put some more pepper on the top for added flavor.

The hubs tasted the first one just to give his seal of approval.

I think next time I’ll add some more salt and pepper while cooking.  Maybe a little balsamic too, and top with some mozzarella cheese before cooking in the oven.

We headed on over to Mandy and Simon’s and saw this beautiful set up.

Our friends, Lindsey and Drew, also came and brought Mediterranean pizza.

Mandy made beef, chicken, carrot and coleslaw wontons.

Everything is out and ready to be dug into!

Everything was delicious!  I definitely want to make this pizza in the future because it had all my favorite things!  Hummus, lettuce, carrots, tomatoes, feta cheese and black olives.

I was glad I didn’t eat any more than this because dessert was well worth splurging with trying all three things we all brought.

Lindsey brought apple crisp that was divine.

Mandy made a chocolate torte that was perfection.

We made the cinnamon ice cream that was in the little bowl that went perfectly with both of these desserts!

It was an absolutely amazing night with the best of friends.  It feels great to be with people where you tell stories, encourage each other and laugh until you’re crying.  We’re very blessed to have these people be a part of our lives.

After getting some much needed rest, I woke up and was ready to eat breakfast.  I had some egg whites in the refrigerator from yesterday when the hubs used egg yolks for the trial run of burnt sugar ice cream that ended up being a bust.

No sense in letting them go to waste.  Paired perfectly with two slices of whole wheat toast topped with butter and red grapes.

I have no idea what our plans are for today. I thought about going to the river for a picnic but it’s still too chilly outside for that so who knows what the day will hold.  I hope you’re having a great Sunday so far!

Early Morning Run

After I blogged last night, I received a phone call from one of my closest friends in Louisville asking if I wanted to go for a run this morning.  I jumped on the idea because since we went running together two days before the marathon, I was hooked with having someone to run with.

I love that Mandy runs in the morning because it starts my day off perfectly and frees me up for the rest of the day to do whatever I want or need to do.  We pounded out 2.7 miles in just under 27 minutes.  After drinking some water and stretching (chit chatting the whole time of course) we headed to the grocery to pick up some things we needed.

After a quick grocery trip, it was back home and time to eat some breakfast.  I was hungry!

I thought about trying my hand at oatmeal again this morning but changed my mind because I didn’t want to put so much effort into it and it not be that good because I needed instant gratification.  So I made waffles instead!

Topped with half a nanner and some fresh strawberries with a drizzle of honey.

A Morningstar “sausage” pattie on the side made this meal complete!

I had thought about going on a picnic down by the river today but a cold front moved in last night and it’s a cool 50 degrees here.  Besides, there is some cleaning to do around here and I have to get ready for a fabulous dinner we are having with friends tonight over at Mandy’s house.  I’m really excited for the spread that we are going to have.  Can’t wait to take lots of fun pictures!  I’ll see you all later!

Bootcamp

Good morning lovelies! I’m up and at ’em, headed to a bootcamp at a gym this morning! I do believe, though, I could’ve slept until noon today. We didn’t fall asleep until late last night and due to early morning and busy day yesterday, I was quite the tired one.

I feel good now that I’m up and going and am excited that I’ll get a workout in early in the day to where I can relax the rest of the day.

I woke up and ate a simple piece of whole wheat toast topped with some butter and grapes this morning.

I didn’t want to eat anything too heavy before working out so I thought this was perfect.

Crazy for Food

I love food. We know this about me. Clearly. But I also love Lenny’s Sub Shop. Lenny’s originated in Memphis, TN, where I grew up, and was my first job when I was 15. They hired me right out of the line because I was such a frequent customer and always had a smile on my face. At the age of 17, I was promoted to marketer of several Lenny’s stores and had the time of my life. It was, hands down, the best job I’ve ever had. The company is amazing, treats its employees with respect and treats its customers even better. Their food is fresh and sliced right in front of you. No processed food here!

Today is their grand opening of the first ever Louisville location and I was psyched! Even better, I found out they were having a promotion for the opening that said the first 50 people in line received free food for a year! You better believe the second I got put on call from work this morning that my rear hopped in the car to get in line.

I was thankful to find out that my friend, Maggie, and I were numbers 9 and 10! Score!

We’ve been here since 5:30 a.m. and it opens at 10:30 a.m. so only 1 1/2 hours to go! Totally worth it. See how happy we are that we’re about to get a year of free, delicious food?

I brought a variety for breakfast this morning. It was all easy grab and go.

I’m the happiest girl in the world right now. I’m just loving this. So exciting! And the news and radio crews are starting to appear. Who knows, I might get interviewed! 🙂

I’ll be blogging later to fill you in on the rest of the happenings later! Here’s to hoping I don’t get called into work before 10:30. That would stink! See y’all in a bit!

Pushing It Back

Since I didn’t eat my afternoon snack of grapes and a mandarin yesterday, I figured I’d eat it this morning for breakfast instead!  It gave me one less thing to pack for work today.  That’s always good.  I do love me some fruit, as you all know.

We’re having a retirement party for one of our OB techs at work today so there is going to be a HUGE spread of all sorts of food!  I can’t wait to dig in!  And of course, I’ll be taking pictures along the way.  I don’t know if I’ll get a lunch post in today so you might just see me later tonight.

We’re headed to a Cinco De Mustache party at a friends house tonight.  I can’t wait to get some pictures. The hubs shaved his beard off and just has a mustache and it’s too stinkin’ hilarious!  Good times, people, good times.

Oikos Newbie

Since I’m breaking into the Greek yogurt world, I bought 4 Stoneyfield’s Oikos Greek yogurt on sale the other day at Whole Foods. I was pretty excited about trying some new flavors.

This morning sounded like a great morning to try the honey on the bottom flavor. I think I’ll be a huge yogurt fan this summer in the hot weather! It’s cool and refreshing.

I added some of my Bear Naked granola for a good crunch.

The texture is growing on me! Oikos actually has a much smoother, less chalky texture than Yoplait’s. I’m a fan for sure! I can’t wait to try my other flavors. And maybe I’ll start incorporating the plain yogurt into regular recipes. Who knows… I’m learning.

New Obsession

I was so thankful for great weather for biking to work this morning!  It’s been so nasty these last couple of days.  I needed to get out there and pedal hard!

I’m keeping it pretty light and clean with food today since we’re having homemade pizza tonight!

Breakfast was made with the help of my new obsession.  The apple corer!  We bought this the other day while grocery shopping and with as many apples as I eat, I knew I’d be obsessed.  True, true.

I didn’t want my blood sugar to spike and me be starving before lunch so I paired it with 3/4 tbsp. of peanut butter.  A perfect light breakfast.
