    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Gourmet Lunch

Lunch was nothing to be ashamed of today.  The hubs couldn’t finish his huge rib-eye steak the other nigth night because it was gargantuan! So I got the leftovers!

Served with leftover asparagus and sweet potato.

Sweet potatoes are still growing on me.  I still would choose a regular potato over a sweet potato but that could be changing.  I’ve surprised myself with what all I don’t eat anymore and now that I do eat!  I love my eating life!

You know that granola bar I didn’t eat for my afternoon snack the other day?

Today was the day!

And I love having such great lunches and snacks!  It makes my day so much more pleasant.  I’m on my own for dinner tonight because the hubs has a meeting.  Who knows what I’ll come up with!  🙂

  1. Oh I adore sweet potatoes. Yum. I like mine to be spiced up though with cumin, chili powder, red pepper.

  2. I had a sweet potato and asparagus for lunch today, too! I paired mine with a vegan boca burger. Yum!

  3. Change is good! I used to never eat sweet potatoes and now it’s a rare occasion that I eat a white one but it does happen every so often 😉
