I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

I'm always learning and discovering new foods, recipes, workouts and ways to live a healthy lifestyle. Join me on my journey towards becoming my healthiest self.

Heat Wave

Plans changed for dinner last night.  Instead of eating at home, we decided to hit up our favorite Mexican place around where we live and dig in.  I had decided that instead of pork chops, I was craving cheese dip and a chicken taco.  So off we went.

I was quite happy to eat some cheese dip.  I’ve been eating just salsa lately and haven’t had good cheese dip in a long while so I decided since I conquered my 15 miles that this was going to be my reward.

The white dip on the right is something they always serve alongside the salsa at this particular restaurant and it sort of tastes like a mayonnaise based barbecue infused flavor dip.  Strange sounding, I know but it’s pretty good.

I ordered one chicken taco.  I forgot to specify soft taco but that’s ok.  The hard shell has less calories than I flour tortilla.

It was a great time of catching up with the hubs who had been in Nashville all day.  And I notice that I’ve had a lot of Mexican food over the past week so I’m going to try and cool it.  But I just love Mexican!  And who can beat a filling meal for under $7?

This morning I woke up feeling the pain of my run yesterday.  My left knee is KILLING me.  Not my kneecap, per say.  If you’re looking at your left knee, it’s to the right towards the back of the knee.  I guess right behind the side of the knee.  I feel like there is a tight tendon there or something that won’t release so I’m trying to stretch it out today and not overdo anything.  I do not want to be injured!!!  I’ve made it this far.  So today was a rest day anyway so I’m hoping it’s all back to normal by tomorrow because tomorrow night is really the only night this week I have time for a run.  All the other nights (including tonight) are scheduled with something or another!  So please pray that it’s nothing and feels better by tomorrow!

We headed to church and I ate a pear on the way for a quick breakfast.  I realized I hadn’t taken a picture until I was halfway finished eating it so here is my half eaten pear.  So juicy!

We enjoyed worshiping with our church family and then had our pizza lunch which served as a time for people searching for a Community Group to get involved in, get connected with one of us.  So I tried to stay good with just two slices of pizza.  One sausage and one pepperoni.  I was disappointed they didn’t have any veggie.

By the time we had talked with people and mingled with friends, I felt full.  So I’m satisfied.  Glad I didn’t go back for a third piece like I had originally wanted to!

We left church and were walking along the railroad tracks to my car and saw this huge fish head!!!  Geez.  Where would that have come from?! ( I mean, obviously, it came from a fish’s body but who throws a fish head out?!)

We stopped by the Redbox and rented a movie for a lazy Sunday afternoon and now we’re home.  And guess what?  It’s 56 degrees here in Louisville!  Ah, a heat wave for sure!  I love it!  Can’t you tell?

Time to settle in to watch a movie and then it’s cleaning time because we have friends coming over for dinner.  See y’all tonight.  Hope you’re enjoying a restful Sunday!

Question of the Day: What’s a random thing that you’ve seen on the side of the road/street before?
