    I'm Lauren and this is a blog dedicated to living life with a healthy balance. I love to run, strength train, bike and just be downright active. I'm a marathoner as of April 24, 2010 and am currently looking forward to qualifying for the Boston Marathon.

    I absolutely love to eat and enjoy great food but doing it all in moderation. You'll see healthy, organic foods on here frequently but you'll also run into things such as pizza and sweets. I believe you can have it all... just not all at once.

Dinner Was Divine

I got sent home from work early because we had too many nurses staffed so at 3:30 I was home and feeling like I needed to get a head start on packing for my trip to Las Vegas tomorrow. But I simply ate a clementine for a snack and slipped into bed to watch The Biggest Loser from last night.

I hadn’t laid down long when the hubs and I got a phone call for an invite to dinner with a dear friend that was in town for a few days. We quickly accepted and got all ready to head out. We ended up choosing Mojito Tapas Restaurant and it was insane delicious! We’ve heard quite a lot about it around town from our friends but had never experienced the goodness ourselves. What have we been missing out on?! BLAH! It was so yummy! It’s one of the restaurants where you need to order several things off the menu to split between everyone and we ordered so much food! Here’s the quick rundown. Sorry the lighting isn’t great. The lighting was fairly low but you’ll catch the drift.

1) Guacamole & Chicharritas- Avocadoes, tomatoes, cilantro, mild roasted Poblano chile, lime juice, red onions
served with our home made plantain chips.

2) Gambas al Ajillo- Plump shrimp sautéed with garlic, olive oil, guindilla peppers, lime juice, aioli and blue dog
bread.

3) Seafood Croquetas- Marinated Shrimp, lobster, crabmeat, white fish croquettes served with a avocado lime aioli.

My favorite!!

4) Tabla Chimichurri- Grilled skirt steak served with green chimichurri salsa and papitas fritas.

5) Pato Confitado- Catalan flat bread style pizza with duck confit, goat cheese, fig marmalade and herb salad.

6) Braised Short Rib- served on a bed of mashed potatoes topped with cilantro and onion.

Aren’t you all just salivating?! I only ate one bite of most things except for the croquettes and braised short rib. With those I had two bites. And P.S. Once again, I tried something I’ve never tried before that most people have… guacamole! I was pleasantly surprised. The whole menu was delicious looking and I let the men order for me so I didn’t stick in my little food box. I definitely want to go back sometime for a fun group night or a date night for the hubs and I.

I came home to eat 2 cakeballs and start packing. I’m so ready to be in Vegas and relaxing with the girls. I will definitely miss my hubs but girl time is much needed in every girls life. I will relish this time because it doesn’t come around very often they we are all able to get together like this for an extended time.
